I lived in the Pacific Northwest for the past 8 years, and I was always looking for new ways to prepare salmon. Poached salmon with a Hollandaise sauce is WONDERFUL (& easy!). Here's my recommendation for poaching liquid:
2 Quarts water
3 cups dry white wine
2/3 cup fresh lemon juice
2 small onions, quartered
3 carrots, chopped

I lived in the Pacific Northwest for the past 8 years, and I was always looking for new ways to prepare salmon. Poached salmon with a Hollandaise sauce is WONDERFUL (& easy!). Here's my recommendation for poaching liquid:
2 Quarts water
3 cups dry white wine
2/3 cup fresh lemon juice
2 small onions, quartered
3 carrots, chopped
3 sprigs fresh parsley
1 tsp. dried thyme
1 bay leaf
2 tsp. salt
1 1/2 tsp. black peppercorns, cracked

Combine all ingredients in the poacher & bring to a boil with salmon (whole or pieces) in place. Reduce heat to a very low simmer for about 1 hour. Lift fish & serve with Hollandaise sauce.
Enjoy!

I love it. Poaches a perfect fish in no time - simple, easy to use, easy to clean. No need to spend $200.00 on a cast iron poacher - this one is great!

I purchased this product for my mother who has used it at least once a week since its delivery and has had nothing but good things to say about the quality of the product. She has used the vessel for sea food as well as ribs. Ribs you say? Yup. It's a great pan to put several slabs of ribs into, put the cover on, and slow cook all day in the oven. The internal meat rack prevents the ribs from sitting in fat and allows the chef to coat the meat continuously with his or her own secret sauce throughout the cooking cycle. Bottom line up front; this fish poacher is well made and can be used for many other things besides a luxury steam bath for dead fish.

We had been looking for an item that would allow us to poach not just eggs but other things as well. This Poacher has allowed us to poach Pears, Apples and Eggs as well. It simply works great and I would recommend it for everyone.

I have used the poacher for more than just fish....Vegetables are steamed great in it and I have also used it for poaching eggs for brunch.

The design of the fish poacher is great, and when I used it for the first time I actually poached two trout in it. They were delicious.
But then I discovered that the pan had leaked about a half cup of water during the 7 minutes it was on the burners. The water nearly extinguished one of the two gas burners under the pan!
I emptied, washed, and dried the pan, then put an inch of water in it and put it over my kitchen sink. Sure enough, it leaked because it has a hairline crack in the bottom toward one end. Poorly made!
