Chef Paul Prudhommes Magic Seasoning Blends has been in business since 1982 when customers from Chef Pauls New Orleans-based K-Pauls Louisiana Kitchen restaurant began asking to take home the chefs unique seasonings. What was once a garage-housed operation has grown to a 50,000 square-foot plant. Currently, Magic Seasoning Blends offers all-natural, MSG free products in sixteen different blends; Magic Pepper Sauce; seven ground, dried Magic Chiles; four Magic Sauce & Marinades; and several cookbook gift-packs.

To use Magic Seasoning Blends in Chef Pauls recipes simply add up the amount of dry herbs and spices called for in the recipes "Seasoning Mix". Substitute the appropriate blend (for example, if you were doing a chicken dish, youd substitute Poultry Magic) in the proportioned amounts for each cookbook listed below:

Substitute approximately ¾ the amount for Chef Paul Prudhommes "Seasoned America" Cookbook
Substitute approximately ½ the amount for Chef Paul Prudhommes "Fork In The Road" Cookbook
Substitute approximately the same amount for Chef Paul Prudhommes "Fiery Foods That I Love", "Louisiana Kitchen", "Kitchen Expedition", and "Louisiana Tastes" cookbooks

If a recipe calls for a sweet spice or an unusual ingredient subtract the amount of sweet or unusual spice prior to adding up the dry herb seasoning mix, then add back the subtracted ingredient(s) to the Magic Seasoning Blends amount required for the conversion.

I haven't tried a bad seasoning flavor yet. These are wonderful. My favorites are Vegetable Magic (not just for vegetables....makes delicious omelettes) and Pork Magic (saute centercut pork chops in olive oil and sprinkle with the Pork Magic). My kids LOVE it.

Seafood Magic is magic to me. This delightful blend of spices and complement almost any fish or seafood. I've been using Seafood Magic along with Meat Magic and Poultry Magic since the early 90's. They are all marvelous. Poultry Magic is also very tasty on Pork!

After discovering the Paul Prudhomme's Magic spices I went to New Orleans for Jazz Fest in '95 and made a point to eat at K-Paul's, the restaurant of Paul Prudhomme. A most memorable meal and I can taste a bit of that in every meal I cook with his Magic Spices.

Seafood Magic is great on salmon or steel head trout in particular. Here in New England I enjoy Seafood Magic on Cod or Haddock but be careful! With delicate fish like these you can easily overpower the taste of the fish with the spice! For best results a little may go a long way.

I do most of my grilling using a 2 Serving George Foreman grill. These spices work great on the GF. I like to very lightly coat my fish filet with mayo before cooking, Just a tiny amount as it helps seal the surface keeping in the moisture and I think it helps the Magic spices integrate with the taste of the fish.

If you are looking to make blackened fish this isn't your spice! Instead get Blackened Redfish Magic. I'm not a blackened fish fan and it's been years since I used it. It worked well back then and I've no reason to think that's changed since.

Years of good eating can't be argued with so 5 stars for Seafood Magic!

This is the best seafood/fish seasoning I've found. Sprinkle it on any kind of seafood or fish for a nicely seasoned flavor - not salty at all - if you want salt, you'll have to add it separately - just really nice herbs.

OK...I's serious here. If you like Cajun food or even if you don't, you really need all of his seasoning blends in your pantry. He's now got a special seasoning for just about everything and I've yet to run across one that was not tasty in the extreme.

Also, you should order a gallon of his hot sauce. It's the most flavorful hot sauce I have ever tried and it's not so hot that you can't eat what you put on it.

If the US Government operated like he does, we might actually have a good news day once in awhile.

The spices are so well blended no one spice overpowers another. Great for grilled seafood where a little zing is preferred. Awesome in gumbo. Perfect for blackening your favorite piece of fish. Highly recommend

I have been using this wonderful seasoning for many years. I was very happy to be able to purchase it in this large size which is much more economical than buying the small bottles in grocery stores.

Seafood Magic gives your dishes a nice touch of flavor without making them too spicy. I use it for many things besides just seafood. It gives a boost to scrambled eggs, home fries, even potato salad.

Ok flavor. It could use a cover with holes that could allow you to control how much to apply. I have found that trying the spoon & shake method can result in applying too much seasoning which will over power the flavor of mild or delicate tasting fish such as halibut. I have ruined more than one meal which could be minimized by the manufacturer including an inexpensive plastic applicator.

Great stuff. Used it to make blackened Drum Fish. Little olive oil and little butter in a hot pan. Dredge the fish through the seasoning and fry it up. Rave reviews from family. Tried it on flounder and tautog. Dipped in egg and mixed flour with seasoning. Brought smiles to my table. From the hook to the pan with the Chef. If you're a fish lover, you've got to try it.
