This pan does all that it is meant to do. Foods come out crispy like they have been fried, but with out all the extra fats!!! You do need to keep the food in a little longer and some items could be cooked at a higher temp. but that is how we were when non stick pans came out for cookies!!! all ovens are different and all pans cook different. Experimenting is half the fun!!! Also great for drying stem ware and glasses, plus it rolls right up and fits in a drawer!!! Highly recoment getting one!!

This isn't a gimmick, and I'm really liking how well this silicone mat works. The results are marvelous!
The first time I used the mat, I baked one of our families favorite foods which we've enjoyed for several years,
Panko breaded chicken, which turned out all over golden brown, more tender & moist then ever before, without turning.

Our favorite store bought (frozen) egg rolls have never turned out as evenly baked & moist or tasted this good.
The mat works as advertised ~ air circulates under food so it cooks evenly and crisp,
and fat drips off the food which makes it much healthier.
Food bakes perfectly without burning ~ sticking or drying out.
And because food is left more moist, reheated leftovers are also more moist and tender.

This is also great for heating leftovers in the microwave, the food is just like fresh baked.
especially if it's a small amount that the mat can be pulled over the top of the food also.

Some foods my need to be baked a few degrees higher (25 to 50) then the recipe calls for, &/or a few minutes longer.

The page of information that comes with the mat includes 15 really good recipes that bake well on this mat.
So far, we've tried 5 of them and thought the recipe was especially good.

The product description on Amazon says up to 480 degrees.
But the information that comes with the mat says ~ "Do not exceed 450 degrees in a conventional oven"
Microwave safe.
Hand wash & shake dry.
Dishwasher safe.
11 1/2" x 16 1/4" ~ but easily be cut to size.
Easy to store in a drawer ~ when rolled up it's 3" dia

Update - Aug 8, 2014. Still impressed with how food bakes - perfectly.
But - the mat is very hard/impossible get clean each time by hand.

I could not believe how well this product worked. All the grease just ran down right through the pyramids which gives you lean good food to eat. I have made salmon on it which got really amazing. I also used it to make meatloaf, meatballs and chicken. It is great how well it cooks all around the food without any turning. I highly recommend this product!

I used this for candied bacon with good success--you pat brown sugar onto both sides of each strip or make a thick caramel sauce for dipping or brushing onto each slice. This time I lined my rimmed baking sheet with foil and topped with the mat. Bacon cooked to crispy-chewy and mat was much easier to clean (after a 10 min soak in hot water) than my purported non-stick baking rack. No black marks remained despite baking with SUGAR in direct contact. I have previously baked this recipe on a "non-stick" steel grid screen over a "non-stick" Circulon pan and both were a real pain to clean up. I also tried a perforated disposable aluminum pan over my cookie sheet-- the bacon stuck lightly to the liner AND I hated knowingly exposing anyone to aluminum.
I really have no intentions to use this for traditional baked goods (I have not had good results with silicone pans or the SilPat liner I bought years ago), however this deserves a place among my kitchen gadgets. btw-I paid full retail (14.99 + tax) as I had already offered to send candied bacon for the teachers' lounge and spied this in my grocery! I'm ordering a few for teachers' gifts here. :)

This product does not work as indicated. It takes an extra amount of time to cook using it AND it does not leave food crispy like it says it does. Not to mention it is a pain to try and clean this thing! Definitely a waste of money.

It works well, food is crispy and not saturated in grease. Much healthier that frying.

For easier cleaning try coating the surface with something otherwise its a real pain to clean.

I bought this pan basically just to bake sweet potato fries on and for that purpose it works very well. I've tried to bake vegetables on it and they turned out mushy and just not good. My guess is that things like chicken wings wouldn't turn out well either. I think for things like fries, pizza rolls and other appetizer type stuff this works ok. I like that you don't have to flip anything mid way. Clean up is terrible. I've only used it a handful of times and already I have this brown sludge down in the crevasses that won't come off with a dishrag. I've tried putting it in the dishwasher and because it so flimsy and won't stand up it just doesn't work. Overall I would rate this product as just OK.
