The most useful parts of this slim book are up front: five chapters explaining the government's revised 2005 dietary guidelines, providing meal planning solutions and outlining the sacrifice of America's healthy eating habits at the altar of busyness: "Often, dinnertime approaches before anyone realizes there's nothing to eat." To stave off the inevitable pizza delivery, the authors provide dozens of simple recipes that working parents or even kids can turn out with just a few pantry staples. Some of these recipes, like savory Skillet Paremsan Chicken and Rice Dinner and Crispy Oven-Fried Fish are more sophisticated than they first appear and, even better, can be made quickly and reliably by inexperienced cooks. But too often these quick-and-easy recipes are dull, unappetizing and even dispiriting. Quick Tomato Rice Soup is simply canned soup mixed with garlic powder and instant white rice. Ravioli Lasagna is little more than packaged ravioli layered with shredded mozzarella and jarred sauce. Handy nutrition information attached to each recipe proves their healthful credentials, but the portions are quite small; one serving of a Mini Pizza Bagel will leave one longing for a visit from the pizza delivery guy.

More About the Author

Sandra K. Nissenberg, MS, RD, is a registered dietitan with a strong background in feeding healthy families and children. She obtained her bachelors in Foods and Nutrition from the University of Kentucky and her masters in Public Health Nutrition from Case Western Reserve University, Cleveland. Sandy has two children who helped inspire her on many of her books, especially as she followed their eating habits through the years. Currently, Sandy works as a cookbook editor, and lives in the suburbs of Chicago with her husband. Her children are now grown and have learned how to eat healthy themselves. Her daughter, Heather, is co-author of one of her books on helping kids make and eat fun and healthy foods.

So far I've only used one recipe from this book, the Chicken Artichoke Casserole. The instructions were not good. After you brown almost a pound of chicken in ONE tablespoon of butter and remove the chicken, what are you supposed to "stir in the flour and heat it until it's bubbly" in??? There was nothing to stir the flour into! I had to add more butter FIRST, so, I'm wary of other recipes if this is the way instructions are written. It also did not need 2 cups of milk! I had to improvise the rest of the whole thing and added some alfredo sauce for some extra flavor. This is a pretty basic cook book with some good-sounding dishes, but if you're a new cook, I'd proceed with caution.

This book is written by a nutritionist! I opened this book to find that it seemed like it was written by a 1950's housewife. Why would someone who has a degree in nutrition write recipes that tell you to use instant white rice and margarine! The average joe knows that those things are terrible for you. The recipes are about what you would expect a 20 something college kid living in a dorm to give you if he was asked for his best recipes, or a housewife from the tang and wonderbread era.

I love cooking and cookbooks, and admittedly only bought this one to get to my $25 minimum for free shipping. That said, I was expecting SOMETHING better than this...

The couple of recipes I have treid are not great at all...bland, didn't come together correctly with the ingredients called for, and just are not anything special. I also hate the fact that they often use pre-packaged, processed foods (canned biscuit dough, canned soups, etc.)...ick!

Also, half the book is comprised of nutritional information and food pyramid info. Ironic, due to the abundance of processed ingredients that this book would attempt to focus so much on healthy eating.

Overall, not what I expected. The only plus was that by buying this book, I avoided paying Amazon shipping charges. It ended up being cheaper for me to to get this cookbook along with the other two I ordered, that it would have been to not buy this cookbook and just pay for shipping.

I think I will give this book to a beginning cook or someone without a lot of cooking skills. On second thought, maybe not....don't want to turn anyone off to cooking entirely.
