But now, her third cookbook is a gem. All new recipes (except for her Chicky Baby Seasoning which is my go-to veggie bouillon anyhow), these recipes are fabulous. They are all healthy where flavour is never compromised. A lot of her recipes use fresh citrus juice (orange, lemon, lime), lots of garlic and onion, but that's where the genius lies. Once I got past that, my meals have been thriving. Radiance 4 Life, however, has a heavy bent on superfoods. The superfoods could be as common as garlic, spinach or kale, or other more foodie things like red rice and quinoa, but also highlights more obscure foods like raw cacao, maca and acai.
The strength of a cookbook lies in the recipes, and they do not disappoint. The Uptown Salad is worth the price of the cookbook alone, as it is that good. I also really enjoyed the breakfast quinoa with blueberries and pomegranate, maca my day smoothie, green velvet guacamole, supercharged hummus, asparagus walnut sunshine salad, lemon asparagus quinoa toss, Hungarian chickpeas, smoky one pot beans and rice, maca chip cookies, and dark chocolate mint cookies.Read more ›
Ms. Challis' narrative is more akin to a conversation you'd have with your best friend, albeit one who is well versed and creative in the culinary and healing arts, and with an added, wicked sense of humor.
