I have a number of vegan cookbooks which mostly gather dust. Radiant Health, Inner Wealth on the other hand, is used all the time in my house. I've made a few of the recipes so many times now that I know them by heart! It's a fabulous book and an invaluable tool for either beginner or seasoned vegan cooks. The recipes are wholesome, healthy, and filling, using lots of fresh ingredients and only using unusual ingredients occasionally (and they are often optional). About the Author

Quintessence Challis began her holistic health journey in her late teens. After a lifetime of numerous health ailments (including acne, obesity, strep throat, constant illnesses, anxiety, and depression), she found that a vegan diet along with an inner wellness regime of meditation and visualization literally made a world of difference. In 1994, she began sharing this knowledge through cooking classes, catering, meditation classes, and workshops. She has also been a personal chef to many clients across the United States. In 2008, Tess published the 1st edition of Radiant Health, Inner Wealth which was the culmination of knowledge from her many personal experiences and work as a chef and instructor. In 2009, her 2nd edition was published, which has been noted as the most unique, comprehensive book on the subject of holistic health to date. Tess enjoys spreading her message of total wellness through radio interviews, blogs, video downloads, cooking classes, wellness workshops, and individual coaching. Tess resides in southwest Colorado.

Format: Perfect Paperback
If you want to make healthy food that tastes great, then you'll love this cookbook! When I'm in the doldrums about what to eat, this cookbook has the answer. I've made lots of the recipes from this book, and enjoyed them all. I had only one or two salads in my repertoire before this book -- now I'm branching out. I love the curry,the spring rolls, and the Mulligatawny Soup. The lemon bars are so good I didn't even get to taste the first batch I made. The 100% whole grain yeast bread is fabulous, the best whole grain bread I've made. And I'm not even vegan! I highly recommend it, and I don't have a lot of cookbooks I feel that way about!

Format: Perfect Paperback
I have tried several different vegetarian/vegan cookbooks and most of them are very bland. This cookbook offers many different flavorful and colorful recipes! I have enjoyed not only eating these creations but looking at them. The recipes are from a wide variety of cultures and it is great to be able to make accessible, affordable food from around the globe. This cookbook is definitely for anyone who wants to eat healthy food and not sacrifice taste! BRAVA!!!!!!

Format: Perfect Paperback Verified Purchase
This is the first book by Tess Challis that I purchased, and I was so impressed that I have since bought her other two and sought out her services as a nutrition coach. That's saying a lot since I am a collector of vegetarian and vegan cookbooks, and have spent significant time over the years studying up on nutrition and fitness - and this is the first time I've followed up requesting personal coaching. What impresses me most about Tess' approach in her books is two-fold. First, she treats health holistically, focusing primarily on diet but also addressing fitness and inner wellness. Second, Tess makes pursuing a lifestyle that many would think impossible maintain - i.e., eating a vegan diet rich in whole, "superfoods" - actually accessible and ENJOYABLE, because her recipes are incredibly tasty and are often examples of our favorites made healthier (such as Thai food, Italian food, etc.). Tess also includes menu planning tools, tips for kitchen setup, and manu suggestions (with information on getting kids to eat healthy), which lends to "this is doable" attitude I had when reading her book. Overall, 5 shining stars to a book that anyone interested in healthy eating should buy.

Format: Perfect Paperback
I decided to read this book when I was at a cross roads with my health. I wanted to become healthier and had considered a plant based diet, but had no clue how to make the change. This book guided me through the "ins and outs" of becoming vegan. With wit and charm, the author explains interesting health facts and tips that made reading this book far from the boring health books I had read before. Between her wonderful recipes and pantry stocking guide, I was cooking with confidence in no time! The book is very easy to follow and the eating guide is simple compared to some of the fashionable diets out on the market. Although I did not follow this book to lose weight, but rather to embrace a healthier lifestyle, I found I had lost over 30 pounds in 2 months. I still have a lot to lose but with my new found energy and joy in living, I find I'm not worried. This book is a great tool for a healthier way of life. I refer to it constantly and plan at least 3-5 meals from it a week!!

Format: Perfect Paperback
Tess Challis provides a collection of wonderful recipes along with solid information about health-full eating.

I followed the 2 Week Ultimate plan with much success...I'm still following these principles as I make food choices (and enjoy the recipes!). I cannot recommend this book enough.

That said, I must also add that the chocolate bliss pie will have friends and family eating out of your hand!!

Format: Perfect Paperback
Radiant Health, Inner Wealth was my very first vegan cookbook and is still my favorite. I also have the Two-Week Wellness Solution and while there are some duplicate recipes between the two, there are enough differences that I am glad I have both. Between them I have made over 40 recipes and I am loving trying new foods! RHIW has menu suggestions in the back, which is very helpful as I am still learning how to put vegan meals together. At first I was disappointed that there wasn't an actual calorie count for each recipe, but instead is categorized as green (low in fat, calories and high in fiber), blue (a little richer than green foods but still ok to eat every day) and purple (a little richer and for occasional use) but now I actually prefer this method, it is oddly freeing. When I first purchased these books last year I was still trying to lose weight so I concentrated mostly on the "green" recipes, but I am now at my goal weight and have been incorporating some of the blue and even purple recipes. The recipes use fresh, organic foods, beans, whole grains and I am trying foods I've never tried before - hello quinoa (which I learned is pronounced "keen-wah), my new best friend! There is also a very helpful section about stocking the kitchen, which I love, as well as kitchen tips and a glossary, which I had to take into the health food store to explain to the nice man trying to help me that nutritional yeast and brewers yeast are not the same thing.
