I bought this cookbook after just having received a nice dutch oven for christmas. I've cooked about 6 different recipes from this book and they all have been delicious. I did not find the recipes difficult, though some required a large number of ingredients. Some take time to prepare, but most of that time is just simmering on the stove while the wonderful aromas fill the house. And the results are fantastic and flavorful. Every time I've tried a new recipe, everyone has been wowed.

I wasn't expecting much from this little book when I picked it up -- was just looking for some easy dinners. But this has ended up being a go-to cookbook for me, especially in winter months. My favorites so far are the Montana-style pork and bean stew and the lamb stroganoff with egg noodles. The recipes cover the gamut, from beef to duck to seafood to vegetarian. It should be noted that "one pot" does not necessarily mean "quick": though the recipes are simple and straightforward, they do often require some chopping and stewing time. But it's worth it. These are recipes you will come back to again and again when you're looking for a hearty meal that will feed a group or provide lots of leftovers.
