5.0 out of 5 stars What a delightful book...from THE outdoor EXPERT!
Whenever I used to go camping...the cooking and food was hotdogs and hamburgs.....no more.....

These recipes are fabulous...I couldn't wait to go to my favorite redwood grove....I just went out in the back yard, got out my dutch oven and fixed up a feast in no time. It was yummy. Dian has done it again....you can't go wrong with any of her books...if you only have one...

2.0 out of 5 stars same stuff as in first book
This book had many of the recipes that were in her first book, Roughing it Easy. Of the new recipes that we tried, most were edible, albeit difficult for camping.

5.0 out of 5 stars Crazy Cooking for the Campground, July 9, 2001
By A Customer
This review is from: Recipes for Roughing It Easy (Paperback)
This woman and her book are amazing! I have followed Dian's outdoor ideas before, but this book has some really innovative and very fun camp cooking ideas. These ideas seemed outlandish until we tried them at our boy scout summer camp-out. The kids went wild over cooking barbecue chicken in a backpack (it really works). The other (dutch oven) ideas we tried were Mixed Berry Crisp and Enchilada Pie. Both were delicious! This is a great book for camping, barbecuing even hiking.

This is a good compilation of some of the best of prior Dian Thomas books with a few new ideas. Her ideas like wheelbarrow barbecues and bread on a stick are always a big hit at our Cub Scout camp fires.

5.0 out of 5 stars More than Hot Dogs, March 12, 2009
This review is from: Recipes for Roughing It Easy (Paperback)
A good book with a variety of fun and Delicious Recipes! I find it difficult to believe the bad reviews; perhaps they were expecting gourmet meals for camping out. Here is what I expected, and received: A good basic guide for eating out that would make cooking while camping out fun and adventurous.
During my childhood, on campouts, I watched my Mom become more angry as the week wore on. She cooked for 6 to 8 people in the camper on a tiny stove and washed dishes in a tiny sink. She would not let anyone else help because there wasn't room for more than one person to work.
My first camp-out with my husband and child was a disaster! I had to carry water to campsite to cook & wash dishes. I only know a few things to cook on the grill, food in an ice chest won't last a full week, and on a camping trip - less items you take is better, so we had a lot of packaged foods.
Husband would not even help fetch water! He said it was HIS vacation and he shouldn't have to work! With that statement, we closed up camp. I left him, but continued to dream of a fun camping vacation. I knew there were FUN, EASY Recipes that would become part of the adventure. When I saw ROUGHING IT EASY 1 AND 2, after making sure the foods sounded like something I would actually eat (I'm a meat and potatoes person), I ran to the checkout counter with both books. (I'm so glad I did!)
I invited my x and a friend to come camping with me and son. We had a Great time! Everyone looked forward to the next adventure meal, and ALL offered to Help!
20+ years later, son remembers the Orange eggs, Mexican Pizza, and a few of my own recipes inspired by the book. He remembers the fun of cooking his own meal over the fire on a stick, and the fun times we had around those mealtime fires.
Many recipes are cooked without pans, some in a dutch oven. Dishes and trash were minimal, making clean up a breeze. These "everyday" type meals make them really great. We ate the foods we loved, prepared in a way that was fun & very tasty.
We had so much fun that we made it a yearly venture, inviting more family and friends to join us each year.

This is a great recipe book for scouting trips. Some classics are included that the boys really enjoyed (banana boats) as well as some really unique ideas that the boys are looking forward to trying - cooking a chicken in your backpack with hot rocks. Great purchase for camping recipes.

This takes camping meals beyond "hobo meals" or "foil packs".

There's lots of fun recipes for everyone in the family to try.

A definite good addition to the family library.

5.0 out of 5 stars Creative, interesting, fun, practical, November 14, 2011
This review is from: Recipes for Roughing It Easy (Paperback)
This is one of the best recipe books I have ever found. I "READ" recipe books and have reviewed literally hundreds.

This recipe book is particularly good because of it's creative focus on technique rather than a collection of ingredient mixes.

Dian Thomas offers a great variety of creative, useful, and fun methods for cooking outdoors.

I thought I knew a lot about cooking outdoors, but Recipes for Rouging it Easy taught me new techniques and offered details to improve old techniques. The advanced uses of Dutch ovens for baking and other cooking is especially helpful and interesting. The chapter on foil cooking goes beyond the old hobo hamburger and onion bake with stuffed onions and stuffed orange rines among others.

Another useful part of the book is the simple, practical and creative fire-building ideas. This goes beyond the boy scouts Lincoln-log fire building and key-hole fires. I won't spoil the fun by describing them here.

It is no wonder Dian Thomas has been on so many prominant televisions shows including Johnny Carson and Good Morning America. Her ideas are fun, creative, and easy.
