This is a cookbook to read front to back. I like it so much I have given it as a gift and am replacing it after losing it while moving. Everything I tried in this book turned out very well.

Much more than a cookbook,

Jean Andrews, who seems to have devoted her life to the study and cooking of the hot pepper, has written a fascinating book that is much more than a cookbook. Her historical researches and insights into the dispersion of the pepper throughout the world (beginning at Columbus's time!) are fascinating. She explains why many national cuisines include the pepper, and why some do not. This is a very enjoyable read. I would have given five stars were it not for Andrews' sometimes pedantic reference to scientific names of various peppers.
