In the 1990's, photojournalist Gen Takeshi Saito was dispatched around the globe by Graphic Sha Publishing (and other entities) to profile successful restaurant design: interiors, menus, food presentation, graphics, and the general ambience. This was the 90's after all, and there was a lot of money being invested as Americans dove (again) into their love of dining out.

Saito's slick photography captures some very lush and very practical restaurant concepts in action in California from High-end to Mall dining. For each restaurant we get shots of interiors, floorplans, plated dishes, menus, and some of the exteriors.

The excellent thing about this book (and this series?) is the inclusion of graphics and food. This is interior design, sure, but more than that it conveys the entire restaurant experience.
