About the Author
Lois Hole, born in Buchanan, Saskatchewan, was a best-selling author, politician, entrepreneur, and an avid gardener. She was Chancellor of the University of Alberta from 1998 to 2000 and Lieutenant Governor of Alberta from February 10, 2000 until her death in 2005.

Rhubarb Spring Celebration Makes 8 Servings 7 cups rhubarb 1.75 L 1 cup water 250 mL 1 cup ginger snaps, crushed 250 mL 2/3 cup sugar 160 mL 1/2 tsp. cinnamon 2 mL 3 tbsp. unsalted butter, melted 45 mL 1 pint ice cream or whipping cream, whipped 500 mL Preheat oven to 350 F (180 C). Grease a 1-quart (1L) baking dish. In a saucepan, combine rhubarb with water. Cover and simmer for 10 minutes. Drain well. Combine ginger snaps, sugar, cinnamon, and butter. Place a layer of rhubarb in bottom of dish, then a layer of cookie mixture. Repeat layering. Bake for 15 minutes. Serve warm with ice cream or whipped cream.
