A must have book for vegetarians, November 28, 2007

I bought this book years ago and use it each time I make risotto. I have since worked out my own variations from Ferrigno's recipes. She does call for a homemade veggie stock, but I use veggie bouillion and it works fine.
Must try recipes: Fontina/Walnut Risotto, Milanese (Saffron) Risotto, Artichoke Risotto and the Fennel Risotto.

This is a great book for someone wanting to try Italian cooking. I had never cooked risotto before, and now it's a regular part of meals at our house. The recipes are very easy to make, provided that you use ready-made vegetable stock. However, the recipe for home-made is also given. Photos are ilustrative and the food is delicious. Great book!
