Making ice cream at home is such a pleasurable food experience, and the Gourmet Creamery makes the creating of that ice cream simple and quick. First, the gel canister goes into the freezer for at least 8 hours (but preferably overnight). Then assemble the Creamery, pour in a chilled recipe's worth of ice cream or sorbet mix, and in 30 to 45 minutes it's ready to serve. There's no salt or ice to fuss with, and you don't have to monitor the process by stirring or hand-cranking; it's all automatic.
The Creamery can be set to high speed for a creamier, softer ice cream, or to low for a firmer scoop. (Once the Creamery is in motion on low speed, do not switch to high--the ice cream will have thickened too much and it will strain the motor. Switching from high to low in mid-process is fine, however.) The clear plastic cover locks in place to hold the paddle still while the canister itself rotates
Clean-up is very easy; warm soapy water will do the trick. The base is not immersible. The gel canister should not contact hot water until it is near room temperature, and let it dry completely before freezing it again. When fully assembled, the Gourmet Creamery is 9 inches wide (at the base) by 12 inches high; the pieces come apart for easier storage.
