Regretfully I found these olives very, very salty, almost to the point of not being edible (and I bought five pounds!). I anticipated receiving them so much, as I can't find oil cured olives in my area. I tried taking a container of them and rinsing them off. That helped a little. I rinsed again, and that may have helped a little more. Right now I'm experimenting by soaking a container of them in fresh water. The salt overwhelms any other feature I might comment on. They are small, but I don't mind the size. The texture is a tad softer than other oil cured olives I've had, but the information says they get harder after opening, if not refrigerated.
