These nuts will taste weird if you eat them raw, kinda like a broccoli shoot. But if you roast them, they taste amazing. I do mine at 350F for 17 minutes.

The nuts are out of the shell but they still have a skin on them. Once they've been roasted the skin crumbles off without too much effort, but skinning all your nuts is still a long and tedious process. I haven't found a very easy way to do it yet.

One thing these nuts will NOT do is make peanut butter. Virginia peanuts don't have enough oil in them to turn into butter, you just get a bunch of crumbs. For the first couple batches I added significant amounts of coconut oil to make up for this. But what you can do is mix Spanish and Virginia peanuts together in a 1:1 ratio; this will form a great peanut butter with no additional oil needed.

These were fresh shelled peanuts with no signs of mildew or damage at all. Fresh, white JUMBO nuts that roasted up fresh.

How to oven roast:
Wet the peanuts and drain well.
Spread out on flat sheet or pizza pan.
Salt to taste.
Roast in 250 degree oven for 45-60 minutes or until just right.

The freshest nuts in the world!

I have ordered these peanuts in the past on subscribe and save because I use them for feeding birds,never had a problem until a month ago.Some peanuts are green and both bags had small black bugs. These use to be huge and fresh, loved them. We will see how amazon wants to handle this problem I cant see sending bugs back through mail system gross.
UPDATE: Amazon replaced of course and I have gotten 2 more orders of this product with no problems.

Just a quick note to say that these peanuts make the best peanut butter EVER. Roast them first at 325 for about 20 minutes, let them cool in a paper grocery sack then shake loose the skins. Fill your Vitamix about 3/4 full then start blending. Use the reamer to jam the mix around until it starts to come together. Once it does, the speed and power of the Vitamix will start to emulsify the mix and after a couple minutes you'll have the most amazing peanut butter ever. Add nothing to the mix, except a little salt if you think you need it.

First time I've purchased and processed these for eating/snacking. They are a good value, out of ten #'s only a few nasty kernels, easy enough to sort out during the first rinsing process. I was worried that the date on the bags seemed to say they were harvested in Feb of 2012, but after checking with the company website, if raw peanuts are stored at cooler levels they can last indefinitely, once processed only a few weeks unless again stored at cooler temps or frozen. They came bundled together in an airtight heavier weight plastic bag along with proper packaging by Amazon. They have skins which after roasting and cooling are easy enough to remove by grasping handfuls and rubbing together, which also separates the peanut pieces. A fun project for a family weekend! I soaked 4 c. at a time (after rinsing well in cold water) in 1 tablespoon of sea salt and enough water to cover and then some, because they will rehydrate..7-24 hours...rinse again and roast at 350 (in my oven..yours may be different) for 45+ minutes, checking /stirring every 15 or so for doneness. The soaking will remove any enzymes making them difficult to digest. They will be shiny when they are done..don't overdue because they continue to cook as they cool (and make these cool crackling sounds).

I wasn't sure if I would like raw peanuts, or wanted to mess with the roasting process, but with the price for those in the 16oz. jars getting over 3 bucks I had to give it a shot. Getting 15% off with Subscribe & Save also was a factor and hopefully Amazon won't drop them from the program like they did the Emerald peanuts I was previously purchasing. Anyway, the peanuts taste great and the roasting process is relatively painless. The only downside is getting the brown wrapper off but shaking then in a brown paper bag seems to be working pretty good. We found that grinding up some salt in our little coffee grinder and just sprinkling it over the nuts was sufficient to get them lightly salted and we didn't have to heat it as some have suggested. Since taste is relative I'm going with 5-stars because I like them and find it's a viable alternative to paying over 3 bucks a pound to have someone else heat them up and sprinkle some salt on... and with the savings of an additional 15% my last purchase was about two-fifty a pound. I'm stocking up because Amazon seems prone to raising the price on everything else I have subscribed to or deleting it from the program... I now have 46 items that I don't receive because of one or the other of these two reasons.

I just made Alton Brown's Wok Fried Peanut Butter with these (with the skins on), and it turned out great! I was worried because 1) They have skins and 2) Another commenter mentioned this variety didn't have enough oil for peanut butter. But the skins didn't affect the taste of the peanut butter and the final viscosity was equivalent to the natural peanut butter you'd find in the grocery store, except this stuff is soooo much better!
