Overall a good madeleine mold - slightly smaller size, December 18, 2011

When I first received this madeleine tin, I soaked it in soapy water to wash before using. When I took it out, I was disappointed b/c I saw rust stains embedded in the grooves that make up each of the 6 panels. Fortunately these rust stains were not difficult to remove using a paper towel. After baking my first batch of madeleines in them, I decided that I do like these tins after all. Here are the reasons why:
1. They are made in France and not in China
2. The shell shape is deep so the cakes come out pretty. I've had tins before where the shell grooves were not deep or pronounced at all and the cakes did not look like shells.
3. The shells are a little smaller than other madeleine molds I've seen. They are not so small to be considered "mini" but they are not as wide as my other madeleine molds and I think this makes the cakes more attractive. A smaller cake also means fewer calories per serving.
4. They are very easy to clean. Just make sure you dry them right away so the rust stains do not form. If you let them air dry, you will see rust.
I will probably purchase another tin b/c I really like this size and have not seen one like this before.
