In Japan, Soba is synonymous with buckwheat noodles and buckwheat. The art of creating fresh Soba Noodles is a prestigious artisan activity. The Japanese producers use old-fashioned milling techniques to conserve the delicate flavors that would be lost using the more modern techniques. Buck wheat is still known in France as "sadzzarin". Buck wheat has a high Protein content and same caloric value as wheat. It loses its potassium when roasted and has virtually no B vitamins. The Soba Noodles are made with buck wheat flour, wheat flour, water and salt. Prior to cooking, the Soba Noodles are page gray and after boiling, they are a pale, translucent tan and are slightly chewy. They are traditionally served at room temperature.
