Another prefessional chef here. The box clearly states what is the case with ALL high-carbon stainless steel: Do Not Put In Dishwasher!!!! Have washed them at least 100 times now, no rust.

The handles are comparable to many higher end commercial/ professional, non-consumer knives. Polyproplene, or whatever, easy to grip, and slip resistant far more than wood ever...

1.0 out of 5 stars Would not want them for free
This a very bad set of knifes ... I own a similar set of Sabatier Precision, I got them on Amazon ... and I love my set.
The ChefStar knives are very light and not sharp at all!! I don't understand how one company could make two products with such a different quality.

Over time, I bought several different sets of Sabatier knives. I guess you have to look specifically at the model name. This set, ChefStar, is junk. I bought the Elite model before and was quite pleased with it. I expected similar quality for roughly the same price and I was terribly disappointed.

I recently bought this set of knives from Amazon and I have to report that the product is severely overprised even at it's discounted rate. The product looks knives, the weight is right, but regrettably they cut like genuine fast food plastic knives.

Avoid this product if you can. Unfortunatly the first of our kids who move out will get these knives. This could categorize us as virtually abusive parents.

The handles are comparable to many higher end commercial/ professional, non-consumer knives. Polyproplene, or whatever, easy to grip, and slip resistant far more than wood ever is, and more hygenic. Fine cutting instruments should be sharpened each and every time they are used, on the included steel, at least a few strokes. ANY knife will loose its edge quickly, if one cuts with it on ceramic, glass, formica, corian, etc. Always use wood!

Is it well worth the $20 bucks? Heck yes! Would it be worth $150? YES! $300? No. They are well balanced, and look great, the wood block is hardwood, and nice looking. This is a great deal, and don't be put-off by people who are obviously used to a Ginsu knife, and not high quality knives which need care and attention, not a dishwasher and no sharpening ever...

The first time I used the steel to sharpen one of the knives, the steel broke in two.

4.0 out of 5 stars I've had my set for a month and I'm pleased with them, December 17, 2003

I have had a Sabatier 9 inch chefs knife for 22 years. I received it for a wedding gift. It cost about $55 by itself way back then. I love it, and it is always the first knife I reach for. I was extremely surprised when I saw this set on Amazon ... I just had to order one. In fact, I ordered two sets. I was surprised when I saw how poorly they compared to my good old knife. The handles are low budget, and the chef knife blade seems to be misshaped (concave, so it doesn't chop properly) so I had to reshape it. That said, I would recommend this set of knives to anyone who is looking for an excellent value in a complete set. The steak knives are extremely sharp, and probably worth the money all by themselves. The block is a beautiful blonde hardwood. The blade steel is high carbon and takes a nice edge. I hand wash and dry them, no problem with rust. The scissors are a nice addition and cut through everything I have tried to cut with them (chickens, turkeys, etc., no nails, tin cans, or leather). A professional cook or chef would not be happy with these knives. An amatuer chef or gourmet probably wouldn't be either. However for the average cook trying to prepare a meal for the family, or just to look good on the kitchen counter, they're a great buy.

I was very disappointed with these knives. While they carry the Sabatier name, they certainly do not have the quality. They do not remain sharp. The kitchen shears are the best item in the set. This is nowhere near the professional quality of Sabatier

3.0 out of 5 stars Not so Bad....., September 22, 2003
By A Customer

I use mine every day. The edge comes with a factory finish. If you want razor sharp, get a wetstone and go to work or take them to a knife shop who'll put a lifetime finish on them for about $5-$8 a blade. They'll polish them in the finishing process also. The handles are dishwasher proof and the blade tips are stronger than the old Sabatier blades that held a great edge, looked fabulous, but broke tips off if someone else in the family put them in the dishwasher (I have a collection of those). I find the blades are quite a bargain for the price, the wood block and blades are quite attractive and the steak knives are sharp enough for surgery on any piece of meat from shoulder to tenderloin. However, the unpolished stainless requires more cleaning and dryiing than the older Sabatier blades as the unpolished surface can spot. For twenty bucks or so, they're a bargain.
