Inspired by a celebrated French design, the six 4-1/2 inch knives in this set cut steaks, chops, and roasts into bite-size pieces while imparting a whiff of ornate chateau manners and crystal chandeliers. They're based on the Laguiole knife, which originated in 1829 in a French mountain village of the same name. Farmers folded them into their pockets. Today, Laguiole knives are made in Thiers, the French cutlery center, according to the original design—except that they don't fold. The handles and the blades of these knives are made of stainless steel. Otherwise, each handle is the original design: elongated, "pistol-grip" style secured by three rivets and decorated with a tiny stainless-steel bee, an homage to the bee on Napoleon I's Imperial emblem, which was awarded for bravery. The blades' fine serrations tend to tear rather than slice precisely through steak fibers. The knives come in a wood tray for safe storage on the counter or in a drawer. --Fred Brack

I bought one of these sets last fall (2001) and I gave them 5 stars considering the price paid. I bought another set in June 2002 and they are different knives. The blades are different - the serration pattern is a bit different and the new ones do not cut as well as the ones bought last year. Also, the handles are so poorly assembled, with sharp edges, you can easily cut your hand. So, what happened between fall and spring?

I will give them 2 stars only because the previous set I bought is great. What you are likely to get now does not deserve any star.

... Bent or crooked blades (depending on the knife you're looking at), broken or ground off points and stamped sheet type stainless steel for the handles. These things would be more valuable if melted down and sold for scrap.

$$$ is cheap for a good set of steak knives which these are not. Given a choice, I'd go with Ginsu.

We have been absolutely delighted with this set of knives. They have great balance, feel pleasing in your hand, and cut flawlessly. What really sets them apart, though, is the style -- most steak knives are either dark-handled, bulky, or both, so you only want to brink them out when you're actually tackling a hunk of red meat. The slim, silver silhouette of this Laguiole fits in unobtrusively with your regular flatware, so you may find yourself using them far more often. Even a chicken dinner turns out to benefit from sharp knives. Our table knives don't make it out of the drawer much at dinner time these days!
