4.0 out of 5 stars I am a chef knife addict & I LOVE these knives!!!
I was wary of ordering these knives because some of the reviews I read. But, being one of those people who has to make up my own mind I decided not to pass them up due to the great cost. 1.0 out of 5 stars Key Word "Stamped"
These light weight stamped blades are cut out from a thin sheet of steel which makes them very, very light. All of the weight is in the stainless steel / polymer sandwich handle (to stick the stamped blade into). Weight is a major factor when buying a knife. A forged knife will offer better overall balance / control than a stamped knife. These just feel cheap.

They do look ok from a distance - but your are better off to get one good forged knife then a whole set of these cheap stamped knives.

I was initially very excited at the prospect of getting such a classy looking set of knives for so little. Then, they arrived in my mailbox.

Seeing them myself, I found them to look cheap. the blades weren't alligned properly, the handles felt awkward and hollow, and furthermore, I couldn't get them sharpened. I even got a different sharpening stone than what was included with the set and gave that a try. no luck. the entire piece felt loosely contructed, as though it would fall apart if I wasn't careful.

I did, however, get a couple of knives for Christmas. I got an OXO good grips chef's knife and two wusthoffs. I found these knives to be far superior and although I know that they are expensive, but they are exceptional. (also got shining reviews in Chef's magazine.) Some of the finest kitchen tools that I own.

I'm getting rid of my Sabatier Prosteel set.

I was wary of ordering these knives because some of the reviews I read. But, being one of those people who has to make up my own mind I decided not to pass them up due to the great cost. I own many professional grade kitchen knives from most of the big-name manufacturers and including Sabatier. So, when I read some of the complaints I was shocked as Sabatier has always served me well. And I am NOT disappointed that I didn't listen to the other reviewers!! WOW!! I am really happy with my decision to purchase these knives. They are very sharp and comfortable to use. The reason I gave them only 4 stars instead of 5 is because the design, though ergonomic, was a little hard to get used to. But once I used them a few times it was like they were an extension of my hand. To the people who say their knives have rusted I say that they are not taking proper care of their knives. Anyone with experience knows that with any good knife, as well as good cookware, you need to wash it by hand and dry it immediately. To me this is just common sense. You don't pay good money for a piece of metal and then soak it in sink water or put it in the dishwasher to get rusted and pitted by the detergent! I encourage anyone who is on the fence regarding this purchase to just go for it!! There is nothing to lose if you want a really great knife set but can't afford big prices!!! And what a great gift idea! I purchased a set for a newlywed couple. I would have died to get such a nice, expensive knife set when I was first married! Thanks for letting me ramble, I hope this helps!!!!

3.0 out of 5 stars a note on carbon steel knives, December 13, 2001
By A Customer
This review is from: Sabatier Prosteel 7-Piece High Carbon Stainless-Steel Knife Block Set (Kitchen)
i don't have experience with this specific knife set, but i wanted to point out in response to the last review that you will have rust with a high carbon knife if it isn't cared for properly, but if you dry it immediately after washing you won't have any problems. In return, you get a knife that will hold a far sharper edge, and will remain sharp far longer.

2.0 out of 5 stars Not worth the price, February 4, 2004

I got this for less than twenty while that offer was going on. IMO it wasn't worth the price.

The blades aren't too sharp out of the box. One of the knives in my set was also missing.

The blades are really thin, and do not cut well even when sharpened. I've had the blade of the chef's knife bend while cutting an onion.

Save your money, and spend it on something else. Also, Walmart carries this same set.

1.0 out of 5 stars Thin blades, heavy handles, July 31, 2003

This review is from: Sabatier Prosteel 7-Piece High Carbon Stainless-Steel Knife Block Set (Kitchen)
The knives look good, and are very sharp. After nearly slicing off the end of my finger (first slip in 30 years), I have decided that the poorly balanced knives are dangerous. The stamped blades are extremely light, thin, and flexible. The handles are thick and heavy, so all the weight is in the handle. When the thin blade meets something tough to cut, it flexes and the result can be loss of control of the knife.

5.0 out of 5 stars Great set, February 7, 2003
By
This review is from: Sabatier Prosteel 7-Piece High Carbon Stainless-Steel Knife Block Set (Kitchen)
I purchased this set from Amazon, and it is fabulous. The main care about these and other carbon steel products: Always hand wash them, preferably as soon as you're done with it, and use warm water and a soft soapy sponge (NEVER use scouring pads), and hand dry immediately. Do NOT use the dishwasher. It may not be the fastest or most convenient way, and admittedly a nuisance at times, but in return you get many years (maybe a lifetime) of spot and rust free, brand new looking and performing knives. Also periodically sharpen them with the included tool. The price then was even better ...Granted, it is not the original French manufacture (Yes, these are made in china if you must know). The design and included block are wonderful. If you like quick and "easy" care and love your dishwasher, stick with plain stainless steel. Thank you Amazon.

5.0 out of 5 stars I love these knives! I feel spoiled, August 4, 2002

This review is from: Sabatier Prosteel 7-Piece High Carbon Stainless-Steel Knife Block Set (Kitchen)
These knives are not only beautiful, but they are sharp and cut food quickly. I didn't realize how much time it took me to cut veggies and meat before with my cheap, dull knives. With such a mediocre customer's rating, I would normally not buy. But, after seeing a review from a customer stressing the importance of caring for these knives; I decided to buy them. I have learned from other cooking utensils and cookware two important things: 1) Higher quality may mean higher cost... but it means longer use and 2) Even the highest quality cookware will be destroyed if you don't care for it. It will take longer to break down than cheaper items, but it will still break down. I understand what the lady means when she complained about these knives rust. However, I had cheap knives that I bought...which never rusted, but were so dull that I had cut myself on several occassions. I think following the customer's advice of drying the knives immediately after washing is extremely helpful...

4.0 out of 5 stars Satisfied, December 27, 2001
By A Customer
This review is from: Sabatier Prosteel 7-Piece High Carbon Stainless-Steel Knife Block Set (Kitchen)
I purchased a set of these knives a couple weeks ago from a William and Sonoma Outlet. I have used them on three occasions. All were very sharp. I am completely satisfied. Just be sure to handwash them and dry after each use. This will ensure that they will not rust. Other reviewers have indicated that their knives rusted.

The knives have heavy, metal handles, not particularly easy to grip when wet, and not well balanced. The stamped Chinese blades feel cheap, and seem rather prone to bending. They don't hold an edge well, but the thin metal is easily re-sharpened.

They do look nice sitting on the counter, but anyone who does any serious cooking will want to spend a little more, and buy something more substantial.
