Directions
Preparation:
Bring water (5 quarts per pound of pasta) to a rapid boil. Add a pinch of salt and pasta, stir. Maintain rapid boil 14-16 minutes or to desired texture stirring occasionally. Drain pasta in colander and serve with sauce of choice.
Store in a cool dry place.

I love this GF pasta. It cooks up so much better than rice noodles. It has the same sort of texture as regular wheat noodles. Does harden up a bit when cold, so not great for cold salads but all in all a great alternative.

Love this product. It has become my #1 pasta because it's completely wheat free, and corn has a better glycemic index than wheat. Also love the fact that it's made with non-GMO corn. This is also one of the few pastas whose package directions give accurate cooking time - most pastas tell you to cook for way too long, but this is not overdone at all when you took according to directions - I usually have to cook it a minute longer, and I like my pasta almost hard. I find it more robust and wholesome than semolina or durham pasta and better texture than brown rice pasta, which often falls apart. This keeps its shape and has that nice springy al dente feel to it. It's great with a good bottled spaghetti sauce, fresh grated reggiano on top and some garlicky sauteed spinach mixed in - fast & easy & yummy when I don't want to cook a more complex meal. Love this brand much better than DeBoles. Great price, too. Everyone I've ever served it to likes it just as much as any store-bought pasta and some folks like it even more, as I do. Sam Mills also has spaghetti, lasagne, shells, fusilli, & other shapes of corn pasta but so far I like the rigatoni best. Really a great product. Oh, p.s. - when you're cooking you do have to stir once in a while to prevent it from getting sticky.

We have been gluten free for several years and I stumbled upon this product after eating a meal at a restaurant that served them. I decided to order a case and try them at home.

My initial observation upon cooking them is the water becomes really cloudy and starchy, it's almost as if the product is melting away as you cook it. There is definitely a sweet spot to find with this product, if you cook it too long it will fall apart, not enough and it will be hard. I know this can be true for any pasta, but for me the time between under done and over done is maybe a minute or two.

The other reason I didn't give this high marks is it doesn't lend well to left overs. It is good if you cook it right and enjoy it while warm. Once it gets cold however it never comes back to life.

For me I like how other brands made from rice cook and hold up. For me, I'd pass on a case of these until you've tried a bag first.

I bought this pasta because it was cheap: at $2.30 per box, it is less than half the price of other gluten-free pastas in my area. Flavor-wise, this pasta is pretty good: the texture is smooth and the pasta adequately chewy. However, the pasta takes long to cook (14-16 minutes), and it tends to break into strips when the sauce is added.

Like other reviewers, I found that the pasta dries out when stored in the fridge, even when I add ample sauce, so I wouldn't recommend this pasta for cold salads. It reheats OK after being in the fridge, but the texture changes slightly: the pasta becomes a bit more chewy, but still edible.

In all, the pasta is pretty good if you only make enough for one night. If you like your pasta cold or if you like leftovers, I'd recommend you look for another gluten-free pasta (Landberg's pasta is more expensive, but is excellent cold).
