There are two kinds of Soy Sauces out there. What is normally referred to as Soy Sauce is "Shoyu". This is Tamari.

The difference? The ingredients.
- Shoyu is made from Soy and Wheat.
- Tamari is made from Soy.

Tamari ends up being a little less salty but has a more complex flavor. It is more ideal for dipping and using as a condiment, where as Shoyu, while still great as a condiment, is often less expensive and is better suited for the cooking process in my opinion.

Anyway... getting off point. This is delicious. After scouring the local Asian groceries for soy sauces, I've found one that I can be happy with!

I've been progressively exploring the taste of umami (`pleasant savory taste'). Soy sauce has it for me as do fish sauce, anchovies, MSM, and mushrooms among `common' sources. My umami exploration has led to botarga and now tamari. Tamari is an item I've known about but seem to forget when I'm in an oriental grocery and overwhelmed by all sorts of fermented soy and fish sauces.

I ran across a umami sauce recipe that included tamari. The recipe prompted my search for `tamari' on Amazon. I picked this one for no particular reason of nuance. Tamari is like soy with more fermented soy taste. Around the house, I wouldn't know why I'd buy soy sauce again given the superior umami of tamari. I love this stuff!

Why so good? That is all I want to know. We went through this stuff almost as soon as we got it--with our recipes of walnut taco meat, jalapeno nut burgers, mushroom burgers and simply drizzled over steam tofu. We used it so much, that now, we are out of this delicious gluten free tamari by San-J. The flavor is less salty, richer and deeper than regular soy sauce.

I am not allergic to wheat and used both, tamari and soy sauce. For Korean dishes, I stick to Korean soy sauce. For other dishes, like the ones mentioned above as well as our Asian salad dressing, I prefer tamari. Next time, I will need to either purchase a larger bottle or get more. It really does disappear quickly.

In comparison with other soy sauces on the market (with or without gluten), my family and I feel this one has a better flavor and doesn't leave that bogged down salt feel in the mouth/throat.
As far as cooking goes, it is easy to use, performs well, and is the proper thickness/consistency.
