My original intent was to buy this book for a friend who is enjoying his cooking internship. I've had mine since '88 and have savored it since. The photography alone is mouth watering. This book will enable him to create masterpieces. It is well written and very easily understood. Each delicious recipe offers the origin, an interesting history and multiple serving suggestions, making this hardcover a true collectible. An ideal gift for anyone who enjoys enhancing their meals to the next level. I am stepping up to the plate and ordering this right now. I am wishing my friend, Ken, the best of luck with his Internship at The White Horse Tavern, as he persues his joie de vie. Bon Appetit!

THE BEST SAUCE BOOK YOU CAN OWN. A SIMPLE APPROACH TO WHAT IS USUALLY THOUGHT OF AS A DIFFICULT TASK. TEACHES YOU THE BASICS AND SOON YOU ARE CREATING YOUR OWN SAUCES. I HAVE OWNED THIS BOOK FOR 23 YEARS AND TREASURE IT NOT ONLY FOR THE TECHNIQUES IT HAS TAUGHT ME BUT THE MONEY I HAVE SAVED CREATING MY OWN SAUCES AND DRESSINGS RATHER THAN BUYING THEM. I ALWAYS THINK OF MY MOTHER WHEN I CREATE A RICH, SMOOTH GRAVY. HER FIRST ATTEMPT AS A YOUNG BRIDE RESULTED IN A PRODUCT THAT WAS SLICED LIKE A PIECE OF PIE AND LAID ON TOP OF THE POTATOES AND MEAT. UNTIL THE DAY SHE DIED HER METHOD OF MAKING GRAVY WAS WATER IN A JAR WITH FLOUR. COVER AND SHAKE WELL AND HOPE THE LUMPS DISAPPEARED, THEY DID'NT. USE THIS BOOK AND NEVER STRAIN ANOTHER SAUCE.

For a person such as myself who is a non cook, I was truly astounded to see so many sauces in one place, one right after the other. I could not believe there were so many and even more variations. This really is a book about sauces from all over the world. An exiting compilation and a great book to add to any cooks library. Pepita Aris has done her research matching a sauce to virtually any/every type of food you can imagine from hot to cold, meats to ice creams, fish to fruits, from Italian to French and even Indian cooking. A really worthwhile book. Highly recommended. Enjoy.
