This spiral-bound index card size recipe book features traditional foods from Sweden, Norway, Denmark and more. Rosemaling in color on the cover. Features traditional foods of all five Scandinavian countries. Recipes include nutty cheese crispies, Danish wine cooler, sourdough pumpernickel, Norwegian crispbread delight, Swedish brown beans, Finnish meatballs, Icelandic pancakes, and rice pudding. Swedish Cream Wafers p. 139 Wafers: 1/3 cup soft butter 1/3 cup thick cream 2 cups sifted all-purpose flour Filling: 1/4 cup soft butter 3/4 cup powdered sugar 1 egg yolk 1 teaspoon vanilla Wafers: Combine all ingredients together in a large bowl. Mix well and chill. Roll out half the dough to 1/8-inch thickness. Using a fluted cutter, cut into rounds. Keep remaining dough cool. Place the rounds on sugar-covered waxed paper. Turn to coat both sides. Prick each round four times with the tines of a fork. Place on ungreased cookie sheet and bake at 375 degrees for 7 to 9 minutes. Cool and put 2 pounds together with the filling. Filling: Combine all ingredients. Spread over cooled wafer and top with another.

Scandinavian Smorgasbord Recipes, in the popular recipe-card file size Stocking Stuffer format, is chock-full of the best recipes and notes about Scandinavian food and culture. Collected by Karen Berg Douglas of Lansing, Michigan, this cookbook contains wonderful recipes as well as information on Swedish culture. Karen learned the art of Scandinavian cooking from her mother. Many of the recipes here are from her own private collection! The cover shows a reproduction of a Rosemaling painting done by Sallie Haugen DeReus of Leighton, Iowa. In addition to recipes, this book also contains information on the history of the Smorgasbord and menus for creating a feast of your own. Karen has updated the traditional Smorgasbord, which usually consisted of bread and butter and fruits, into something that would work as a feast today!

Scandinavian Smorgasbord Recipes contains a wide variety of traditional recipes that are sure to please all your guests. A Sample Smorgasbord menu includes dishes of Matjes Herring, Crusty Stuffed Bread, Finnish Squeaky Cheese, Danish Liver Paste, Oysters Helsinki. The possibilities are endless! For several years I have missed the presence of Smorgasbord restaurants in the NY city area. This volume has enabled me to remember and even produce many of the items that I have been craving. I am very well satisfied with the entire contents of the book.

This was not what I expected. Have used one recipe and that'll probably be it. Also most recipes are for huge groups. A waste for one person. I'll keep it though b/c it's "unique".
