What's Claggum?,

Part of the fun of Scottish cuisine is guessing what food could possibly be lurking behind the odd names. Though this cookbook doesn't include "haggis", it does include such intriguing dishes as "Roastit Bubbly-jock", "Mince & Tatties", "Fife Bannocks" and "Claggum" (Claggum, for the record, is not a mess of onions, cabbage and chopped liver, as I suspected from the name, but rather a pale & creamy toffee-type candy.) Along with the colorful names are some straight-forward ones like "Ginger Flapjacks", "Steak in Whiskey Sauce" and "Butterscotch Shortbread". One of the things I like about the recipes in the "Favourite Recipes" series is that most of them use ingredients that are quite common and relatively inexpensive. A few, like treacle, sweetbreads and mushroom ketchup, are more difficult to find in the typical U.S. supermarket, but one can substitute other ingredients and get a decent approximation of the dish. A delightful little book with 34 recipes.

This is a wonderful cookbook, supplemented with nostalgic scenes of Scottish home life in the olden days.
Each recipe is delicious. What a treasure!
