Directions
You will need: 2 1/2 lb bone-in-chicken (6 to 8 pieces) with or without skin or 2 lb boneless skinless chicken breast halves and 1 egg to moisten. Preheat oven to 400 degrees F, coat 15x10x1-inch metal baking pan with 2 tbsp oil, 1 egg to moisten, moisten chicken with lightly beaten egg, shake off excess, empty coating mixture onto plate, coat chicken on all sides by pressing firmly into mixture, discard any remaining mixture, bake at 400 degrees F in oiled baking pan until cooked through. Bone-In: Bake 20 minutes, turn and bake 20 minutes more, total 40 minutes. Boneless: Bake 20 minutes, do not turn.
