In 2012, she became a certified health coach through the Institute of Integrative Nutrition.

Through her blog at skinnychef.com she attracted interest from NBC producers and began to spread her passion for healthy cooking through radio and television, making appearances on the Today Show, CBS, NBC and other local TV and radio programs. Currently she is the host of Livestrong Woman's Healthy Cheats and Food Courting, two internet TV shows. In late 2012, she will begin hosting her own broadcast TV show weekdays for the Health and Wellness Network.

Secrets of a Skinny Chef is excellent. I am not Martha Stewart or Rachael Ray yet enjoy cooking healthy, delicious meals for myself and my family. This cookbook is exactly what I need. The book has easy-to-find ingredients with simple instructions for each recipe. I've already made nine different recipes with it and they were super easy but very delicious. I have a son that is a VERY picky eater and he loved everything I made. So far, I've made Supermoist Turkey Burgers, Sesame Chicken Hold the Deep-Fried Breading, Chicken "No Pot Belly" Pie, My Dad's Trim Chicken Enchiladas, Breaded Zucchini, Mayonnaise is Not Your Enemy Coleslaw, Broccoli Bacon Salad, Stir Fried Garlic Broccoli, Slender Blondie Brownies and Crustless Apple Pie....all delicious! The tips throughout the book are interesting and helpful. The recipes are so delicious and flavorful that you won't feel deprived. If you eat healthy, this book is for you!

This is more than a cookbook, it is a healthy eating bible. I have tried various recipes out of this book including banana bread (which came out moist and delicious) and meatball sandwiches (which the whole family loved)!!! I would reccommend this cookbook for anyone looking to cook healthy, delicious meals.

I have been a Skinny Chef fan for a couple of years and the tips and recipes I've received from the newsletters and website have provided me with ways to cook healthy meals for my family that they love. I am so excited that she has finally written a book! Try the Stuffed Shells recipe - its amazing! Pigs in a Blanket and Banana Cream Pie made light? Thank you Skinny Chef! Can't wait for the next book!

i have been cooking out of this book for the last two weeks, and my husband (who is somewhat picky, and definitely doesn't like diet food) has raved about every meal that i have cooked. similarly, my daughter would not let me put the macaroni and cheese away she was enjoying it so much, and she polished off the sloppy joe mix as if it was cake (which she also happens to love). the recipes are easy to follow, although ingredients are all listed in pounds and temperatures in fahrenheit so i have had to convert to metric (being australian), but i am just annotating the book as i go. there are not a lot of pictures, but the titles of the recipes make it fairly easy to predict which ones will become instant favourites. the recipes also use standard ingredients - no weird and wacky things that are impossible to find or will never be used again! and the servings are very generous. this book is a keeper, and will get used a lot in my house - i thoroughly recommend it.

This book has nice pictures and the tables of contents sounded good. She has some good tips and also a good shopping/staple list included. That being said, I will not keep it. I have two main complaints about this particular cookbook. The first is that canned, crushed or stewed tomatoes are used in many of the main dish recipes and both my husband and I dislike them. In some cases I could probably find a way to substitute ingredients like tomato sauce and chicken broth or something like that, but the purpose of buying a cookbook for me, is not having to think or experiment. The second thing that I didn't like is that she seems to have names for items that are misleading from what I expected when I read the Table of Contents. I was quite disappointed. For example she calls a dish enchiladas but it is made with thyme, rosemary, ricotta and mozzarella cheese. I live in the southwest and this is not what we would call an enchilada. I was looking for a modification of a tex-mex favorite, but instead I find an italian remake. It may be good, but again, not what I expected. Similarly, she has a recipe called "pigs in a blanket" ... I had hoped to find a lower fat version of the classic favorite tailgate/week night supper with reduced fat hot dogs. Her version is cabbage rolls stuffed with ground turkey ... how about calling them cabbage rolls or stuffed cabbage please? Her "Light" lasagna is made with turkey and veggies rather than beef, but still has nearly 600 calories per serving! I was hopeful about the dessert section, but really, cottage cheese in tiramisu and prunes in a brownie just sound unappealing to me. It will cost me nearly the price of the book to send it back, but I know I'll never use this one.

As a grad student, I don't really have much time to cook extravagant things. At the same time, I can't afford eating out every day. I also like to eat healthy. What's a girl to do?
This particular book is perfect for someone with a lifestyle similar to mine, or just anyone in general who likes their food healthy and tasty (read: almost everyone:). All recipes are just simple enough to be fast and sophisticated enough remain flavorful and unique. It is also truly great how good the author is at incorporating vegetables and fiber into pretty much every meal without compromising the flavor. Most ingredients are very simple and, aside from certain spices (which last for a while) inexpensive.
With the infinite number of recipes available online these days cooking books are probably not as popular as they used to be. However, I don't regret for a single moment that I saw this book at a store and decided it was worth purchasing. Highly recommended to anyone.
