While these have grown well for me going on my 3rd year this summer. They have a tendency to stay good as baby corn for a limited amount of days. After they get just a little big the texture went wrong for my tastes. Its becomes more like what you would expect, your chewing on a slender chunk of cob. Mean while I go to the local Mongolian grill and they have fresh baby corn that puts the size of some that I have harvested to shame and the ones at the restaurant as well as the ones in the grocery store retain their proper baby corn texture where these garden grown do not. On the plus side after they are too far gone for baby corn I just leave them and they turn into a pretty red popcorn seed. Or planting seed for that matter.
