First I bought the regular Capirete sherry vinegar - good. Then I bought the aged-8-years vinegar - better. And finally I tried the Capirete 20-year-old vinegar - bingo! - the best. It is smooth, deep and luscious, and it makes recipes that call for vinegar all the more elegant.
