I have been missing being able to eat Udon soup at my favorite Japanese restaurants. Now I can cook my own noodles and add the base and meet my cravings. It is delicious!So happy!

This is quality goods. I would use it in dipping sauce as well as soup/noodle base, With pot stickers for instance, I added a little to my standard homemade dipping sauce and it definitely kicked it up a notch or two. Straight, it tastes a little like a standard "fish sauce," but it isn't. I would also soak some star anise in a portion of this. It would give you a lot more leeway with authentic Asian flavor.

Great dipping sauce for soba noodles BUT,
The price is ridiculously high. Can be get it at local Asian market for 1/4 this price.

This stuff is great, it is like dashi prepared with soy sauce and mirin and other Japanese flavors. you water it down and it makes a really nice broth with lots of "umami " flavor! I make shrimp and pork dumplings and use this broth, I just add some green onion, chili pepper and it's all set. You can add sesame oil, ginger or whatever you like. Sometimes I add the water from the Shitaake Mushrooms that I soaked overnight. Great flavor base for many dishes.
