About the Author

Amy Roloff is well-known to millions of fans from TLC's family-friendly reality TV show, Little People, Big World where audiences have watched her family face obstacles, overcome challenges, and live their lives on camera, as well as watch Amy prepare meals for her family over the past seven years. Amy may be little, but she is making a BIG difference in the world in many ways. Business woman, inspirational speaker, TV star, philanthropist, farm owner, author, and mom are just a few words that describe this one-of-a-kind woman. Amy realized her passion for people and for helping others reach their potential as a kid growing up. Her challenges, experiences as a little person, and successes as a graduate with a BSBA from Central Michigan University in Personnel and Hospitality, an early education teacher, manager of a soccer club, youth team soccer coach, television star, and charity foundation head are some of the ways that she has naturally inspired and touched people lives. She has made a difference and wants to know that others can make a difference too. In preparing the cookbook, TLC’s production company filmed her in her kitchen as she tested recipes and worked with the food photographer as he shot pictures of the plated food for the cookbook. The filming continued during a meeting with the publisher as they discussed the forthcoming cookbook with Amy and the food photographer. These four special one-hour programs of Little People, Big World are being aired during 2012 and leading up to the publication of SHORT & SIMPLE FAMILY RECIPES. Besides being a masterful home cook, Amy has made four appearances on Rachael Ray’s program where they have cooked food together. She has done a number of cooking demonstrations at public events such as The Bite of Oregon. Amy, her husband Matt, and their children live on a farm near Portland, Oregon.

Rick Schafer's career in photography began with a ten-year apprenticeship under renowned photographer, Ray Atkeson. Schafer's work has been published internationally over the last twenty years. Recent works include these exhibit format books: Oregon IV; Our Portland; Oregon Golf; Magnificent Places: Oregon Coast; and Portrait of Oregon.

More than just a cookbook, Short and Simple is another tantalizing glimpse into the lives of the Roloff family. Amy not only shares her family favorites, she talks of her experiences cooking for her birth family and later for her husband and children. Her love of cooking is always evident, and the impact that love has had on her family is evident in the many marvelous pictures and family comments that punctuate this delightful book. It's the next best thing to being invited to a meal at the family table.

This is the best cookbook I have seen in a long time! Get it and try the chili on page 67. My husband had a heart attack and I have had to revamp how I cook and this cookbook calls for lean meats and simple techniques and is very healthy. Definitely worth it!

I just received my copy today and have already read through it and I can't wait to try the recipes. As others have said the recipes use simple ingredients that are available at any grocery store and are very easy to follow. I also enjoyed Amy's stories about growing up and her kids. Amy Roloff's cookbook may be titled "Short and Simple Family Recipes", but those recipes are full of flavor! As one of the stars of the popular reality TV program, "Little People, Big World", Amy is a busy working wife and mother of four children. What you see on TV is just what you get in this wonderful cookbook, and family comes first for Amy Roloff. While Amy wrote the heartfelt acknowledgements & introduction, her mother and father wrote the very touching foreword for the book. I enjoyed the family insights and photos every bit as much as the tempting recipes and colorful food photos. Beginning with "Pantry Essentials", and then moving from "Starters" on through to "Simple Sides", and everything in-between, you will find seventy-five fun and fabulous recipes! Here are some of my favorites: "Baked Potato Slices"; "Farm Country Omelet"; "Lemon Scones with Homemade Blackberry Jam"; "BLT Salad"; "Quiche Lorraine"; "Roast Pork with Spiced Apples"; "Roast with Country Veggies & Potatoes"; "Pasta Carbonara with Peas"; "Bananas Foster"; and "Roloff Farm Rustic Peach & Berry Cobbler". Amy Roloff has written a cookbook where love is the key indgredient, with creativity and an expansive knowledge of food and food preparation included for good measure.

I just made the Chicken Enchiladas and they were scrumptious--5 stars all the way! I have always wanted to make homemade enchilada sauce but never found a recipe that sounded quite right. This was perfect. One more thing checked off my "bucket list"! Since there are only 2 of us in our house, I made half the sauce recipe easily. I did not add rice to the enchiladas because I didn't want too many types of fillers but other than that, I followed the recipe to a "T" and would not change anything else. The flavors were complex and very much restaurant quality. I especially liked adding a ladleful of sauce to the bottom of the baking dish--never thought of that! Go Amy--we did "ENJOY"!

By the way, I haven't tried any other recipes in the book yet but if this one is any indication of the quality, I'd say you've got a hit--you've hit it out of the ballpark! Looking forward to your next book!
