Santoku (meaning 3 virtues in Japanese) knives are aptly named for their ability to slice, dice and mince. A beloved knife of professional and home chefs, Santoku knives are well-balanced and work exceptionally well for a number of tasks around the kitchen. The Shun Edo Santoku knife will become a favorite in your home too. Designed for power and precision, Shun Edo knives feature Shuns most advanced ergonomic handle design and blade geometry. Every aspect, from the shape of the blade to the way the handle fits snugly into the users hand, has been designed for maximum comfort and control. Razor-sharp blades, handmade from pure VG10 "super-steel", allow the weight of the knife to do the work. Each blade features mirror-polished edges and a hammered ("tsushime" in Japanese) finish for supreme cutting performance while creating natural food release from the blade. Each knife is sharpened by hand to an extreme 16-degree cutting edge, making them among the sharpest available. The name "Edo", the ancient name for the city of Tokyo, celebrates the Japanese styling of these knives, made in the tradition of Japanese sword-making. Handles are made from resin-impregnated Pakkawood for strength, durability and moisture protection, while their contour provides maximum comfort. The heavy bolster encourages proper knife grip, while handles feature a slight elevation to allow full contact between the knife and cutting surface without the chefs knuckles getting in the way; while their "zero balance" provides additional ergonomic comfort. All Shun Edo knives are NSF certified for use in commercial kitchens.

I purchased the 51/2 inch utility knife. I was amazed. I cook for a living, have used and loved my wusthof's for years. The Edo utility was the sharpest thing I had seen, light weight, fit in my hand, easy to maneuver, best knife I have ever used. I ordered the 71/2 in Santuko. Incredibly sharp but very heavy! It is heavier than my 9in chefs knife. I should never have strayed. To be fair the extra weight does cut through hard vegetables and fruits really easy. Not worth the money.

I bought the 5 inch knife a few months ago and I have nothing bad to say about its form or function. It is both a gorgeous addition to my kitchen knife collection and works wonders. It is sharp, sturdy, and all around fun to use. However, being near $150+ this knife does not seem necessary for the average user. I can see the appeal for a chef or cook, but beyond that there are cheaper blades that will work just as well with the proper use and maintenance. That does not make the knife "not worth it" but merely one of those things that should be thought through before purchasing. Is it a need or a want? and go from there.

I replaced a cheaper knife set Santoku type knife with this one. It is a fine looking knife, but it turned out to be a lot wider knife than the one I was replacing. I ended up moving my meat cleaver into a drawer so I had a spot for it in my knife block. I have had to sharpen it twice in three months, but it keeps an edge many times longer than the knife it replaced. I use this knife a lot, and it is handy to use on most ever thing I cut.

Pros: This is a very sharp and gorgeous knife. Works like nothing else. Feels very solid, if not heavy in one's hand - I love the way it's balanced.

Cons: One has to "baby" this knife - it requires professional sharpening more often then a typical high-quality German / American knife, and banging the knife on the cutting board may chip the blade. In short, not for everyone.
