From the Manufacturer

Shun Classic Cutlery

Why Buy Shun Classic:

Born of the ancient samurai-sword-making tradition and hand-finished for precision and beauty, Shun Classic is an ideal choice for anyone buying their first Japanese knife or 50th. The high-quality line of cutlery makes a worthwhile addition to any chef's arsenal of tools--it's used by professional chefs and home cooks alike. Produced in the widest variety of specialized styles, the Classic line features both traditional European blade shapes and innovative cutting-edge designs.

Shun Classic's amazingly sharp blade is famous for both edge retention and ease of sharpening. Each blade has a core of VG-10 "Super Steel" with a Pattern Damascus cladding of 32 layers of high-carbon stainless steel--16 layers on either side. While the wood grain pattern enhances the knife's beauty, it also adds durability and stain resistance, and reduces friction when cutting.

NSF certified for use in commercial kitchens.

Detailed Features

  • Blade core consists of high-carbon VG-10, a Japanese super steel known for its edge retention, allowing the knives to hold their sharp edges for years.
  • Blades boast a 16-degree angle, making these the sharpest knives out of the box. This is sharper than traditional European blades, which are usually sharpened to 20-22 degrees.
  • Clad with 16 layers of SUS410/SUS431 Pattern Damascus stainless steel on each side for strength and flexibility. This metal is corrosion-resistant and easy to maintain.
  • Damascus styling adds to the beauty of the knife while the microscopic air pockets created by the cladding process reduces friction during slicing.
  • D-shaped handle fits in the palm and provides comfort and control, keeping the knife's handle secure in the hand during use.
  • Available standard in D-shaped handle styles or by special order in reverse D-shaped handle styles.
  • Pakkawood handles, made of resin-impregnated hardwood, are NSF Certified for use in commercial kitchens.
  • Produced in Seki City, Japan, the capital of samurai sword manufacturing.
  • Rockwell hardness rating of 60-61 ensures that it takes and holds its incredibly sharp edge longer.
  • Hand wash and dry recommended; limited lifetime warranty.

A member of the stylish Shun Classic line, this durable paring knife deftly handles intricate dicing and trimming tasks alongside its requisite peeling and skin-removal role. The paring knife’s compact size makes it easy to handle and thus a favorite when control and precision are a priority. The tool features a narrow straight blade measuring 3-1/2 inches in length with a piercing tip.

Leveraging a 90-year history of superior workmanship, Shun knives are precision-forged in Japan by renowned blade manufacturer KAI. Using technologically advanced processes, a VG-10 "super steel" core is clad with 16 layers of high-carbon stainless steel to produce a rust-free Damascus-look blade. The Damascus detailing not only enhances the knife’s aesthetic appeal, it also prevents morsels from sticking and avoids crushing or damaging foods. Forming a comfortable D-shaped hold, a fused blend of hardwood veneers and resin comprise the unique ebony Pakkawood handle. A traditionally offset stainless-steel bolster protects knuckles while a steel end-cap finishes the piece. Although dishwasher-safe, hand washing is recommended. This product includes a lifetime warranty. -- Amy Arnold

We just added this little vegetable knife to our shun block - it's a perfect addition! As per usual, this Shun product is sturdy, sharp and truly beautiful. The paring knife has always been our favorite "go-to" knife in the block, and with all of the action that one sees, we felt that the straight blade vegetable knife would complement our set well. It's great for quick prep of even the toughest veggies - the knife slices and dices a carrot as if it were warm butter. Be super careful with your fingers! As with all knives, Shun products require sharpening occasionally, but we cook nightly and are just at the point where the rest of the set requires attention - and it's been 3 years since purchase.

Although these knives are pricey they are sharp, solid and really gorgeous... worth every penny! I can't imagine cooking without my Shun knives!

This is my new favorite paring knife. I lived in Germany a while back and brought home a handful of kitchen knives from various manufacturers. Until now, a couple of those German knives were among my favorite kitchen tools. However, last week I sliced up some mangoes, bananas, and limes with this little Shun paring knife, and I have already given away some of my old German knives. This Shun knife cuts quickly and cleanly, and the rounded handle was very comfortable to hold in comparison to the rectangular handle on some other knives.

One reviewer suggests using a "sharpmaker". That could throw away a large part of the reason you pay more for a Shun. The steel has alloys that make it possible to sharpen the edge to 16 degrees and have the edge hold. Most knives are sharpened to around 20 degrees because they are not capable of holding the narrower edge and must be blunter. If you use a standard sharpener with your Shun, you may end up wondering why other people make such a big deal about how sharp a Shun is while yours is not much better than your other knives. Shun makes an electric sharpener and whetstones. There is a discounted sharpening service through kershawknives.com for Shun owners. If you use a local knife sharpening service, make certain they understand proper angles (bevel).

Shun is one of the best knifes around. If you don't own a shun you are missing out on the art of cooking. I believe it pays to cook with the best products it will always pay off in the end. I own several Shun knife's and if you ever try one you will not want to use anything else.

I bought the larger chef knife for my mother in-law last year. This year I bought her the pairing knife and went ahead and bought one for my mother and myself. This knife is razor sharp. It easily cuts through paper and seems to hold an edge fairly well. I am not sure how well it will resharpen, but I think the blade will do well on my sharpmaker. I think I will start to add a few more shun blades to my kitchen knife collection. I would highly recommend this series of knives.

This knife is sharp and cuts my vegetables. I particularly like processing avocados and broccoli with this knife.

Do you like eating delicious vegetables finely processed? Buy this knife, dummy.
