The Shun Edo 6 Piece Knife Set features 4 of our most-popular knives, a honing steel and beautiful vertical bamboo block for storage. Set includes one each of the following knives: 4-Inch paring knife, 5.5-inch utility knife, 8.5-inch chefs knife and 8.25-inch dual-density knife. Designed for power and precision, Shun Edo knives feature Shuns most advanced ergonomic handle design and blade geometry. Every aspect, from the shape of the blade to the way the handle fits snugly into the users hand, has been designed for maximum comfort and control. Razor-sharp blades, handmade from pure VG10 "super-steel", allow the weight of the knife to do the work. Each blade features mirror-polished edges and a hammered ("tsushime" in Japanese) finish for supreme cutting performance while creating natural food release from the blade. Each knife is sharpened by hand to an extreme 16-degree cutting edge, making them among the sharpest available. The name "Edo", the ancient name for the city of Tokyo, celebrates the Japanese styling of these knives, made in the tradition of Japanese sword-making. Handles are made from resin-impregnated Pakkawood for strength, durability and moisture protection, while their contour provides maximum comfort. The heavy bolster encourages proper knife grip, while handles feature a slight elevation to allow full contact between the knife and cutting surface without the chefs knuckles getting in the way; while their "zero balance" provides additional ergonomic comfort. All Shun Edo knives are NSF certified for use in commercial kitchens.

Purchased the Edo Knife set based on the reviews and the descriptions. I also have some Shun classic knives and older Wusthof knives. The Edo (and Shun) knives are nicely made, they both use VG-10 for the blade, the Edo being solid VG-10. The Edo is ambidextrous, vs. the Shun Classic D handle. But I have two significant issues with the Edo knives/set, the blade bolsters on either side of the blade looks nice in the pictures, but it is has very sharp edges. As sold, if you use a pinch grip on the knife, these sharp edges are very uncomfortable and make the knife unusable. I carefully sanded down the sharp bolster edges on all the knives. If I paid list price range of these knives, I would have returned them. Maybe one of the reasons they are heavily discounted. I much prefer the D handle and smooth bolsters on the Classic series. The knife blade profile on the Edo set are all a bit odd, they are OK, but I always feel uncomfortable cutting with them. The larger blades are quite heavy, and their wavy serrated utility/chef's knife is an oddball once you start using it, and it doesn't really do anything well. Have fun trying to get that one sharpened. The sharpening stick is way to coarse and will quickly destroy the fine factory edges. Tried it once, will never use it again. If you use a sharpening stick, then get something more blade friendly like a Idahone Fine Ceramic or DIck steel. The little dimples on the Edo blades are cute, they help on some prep, but cut something sticky or starchy and the holes are more difficult to clean.

The Shun VG-10 stainless is good, but it doesn't come close to the edge, feel or performance of a tradition Japanese knives using white or blue steel like knives from Masakage, Konosuke, Moritaka, etc.

This set of knives is pristine!

Top of the line cutlery most definitely.
Great for anyone - from chefs to home cooking.
Stays sharpened exceeding longer than the average high performance blades.
Carefully crafted, these foreign made knives are a small investment to a lifetime of kitchen-ease!

This is a wonderful set and the block does offer you options to get additional knives. I've also placed other Shun (Classics) in it and they look great in there and the block still has room for more.
