Everything about Shun's Premier line, from the beautiful Hamon to the layered Damascus to the Shun logo embossed in the end-cap, calls to mind the handcrafted knife-making techniques of ancient Japan. Each blade is made of VG10 steel, clad with stainless Damascus, and ground for lateral stability and incredible precision. Where the steels meet, a wavy line called a Hamon is formed, similar to tempering samurai swords with a clay-baking technique. The striking, hand-hammered finish ("Tsuchime" in Japanese) reduces drag when cutting, as well as quickly releasing food from the blade. Once you experience the incredibly thin, sharp edges, you'll know why they are Premier.

The graceful curves of the walnut PakkaWood® handle allow for a variety of comfortable grips. The Shun logo embossed end-cap adds balance and beauty to the knife, whether in the hand or at rest in the block. Shun's Premier line is NSF certified for use in commercial kitchens.

The Story of Shun and Kershaw Knives

Kershaw Knives was founded in 1974 with one simple mission: to design and manufacture tools that knife users would be proud to own, carry, and use. Kershaw Knives is part of the KAI Corporation, which has been Japan's premier blade producer for more than 90 years. Yet their tradition of fine blade manufacturing goes back even further. KAI factories are located in Seki City, Japan's famous samurai sword-making center. The bladesmiths of Seki City have been making some of the world's finest cutlery for more than 700 years. Working with today's technology, many of the descendants of those bladesmiths continue the tradition of excellence today at KAI. Led by Chief Executive Officer Koji Endo, KAI continues to expand its product lines and international trade, as well as earning the admiration and trust of its industry and customers. While many of Kershaw's quality products are made in the company's 42,000-square-foot facility in Tualatin, Oregon, Kershaw also draws on KAI's resources to provide the very best for the customer.
