Product Description

Designed for use over a cutting surface or bowl, this mandoline by Shun makes it easy to cut julienne slices, make French fries or shoestring potatoes, and more. As part of Shun's Pro line, the mandoline provides a VG-10 super steel cutting blade, which can be easily resharpened on a whetstone as needed. The unit's high-quality blade offers a one-sided beveled edge with a hollow ground back, which creates an air pocket between the blade and the food for reduced friction, helping to prevent food from sticking to the blade. In addition, the thoughtfully constructed mandoline's food carriage comes attached to the guide rail for peace of mind, while its removable blade allows for safe storage. Other highlights include heavy-gauge stainless-steel housing for stability, ebony black PakkaWood feet that can be removed when storing or cleaning, and a main deck that can safely go in the dishwasher for thorough cleanup from one use to the next. Accessories include four blades and a blade storage case. Blades consist of a VG-10 slicing blade, a 1/8-inch shoestring blade, a 1/4-inch julienne blade, and a 3/8-inch French fry blade. Sharpening recommendations: Regular sharpening (as needed) with a whetstone. Soak the whetstone for about 20 minutes, set on a damp cloth for stability, and pull the knife's edge across the whetstone at a 16-degree angle. The wide Shinogi (bevel) on the knife can be used as a guide, making it easy to maintain the knife's sharpness.

This is a great mandolin. I have several Shun knives and they are of excellent quality so I expected the same for the mandolin. It is as I expected. I had one small problem with the main blade...there are two pieces of plastic that hold it in place in the mandolin and one broke off when I was removing the blade. I don't know if it was pilot error or if it is just a weak point in the blade. I emailed Shun and received a new blade within a few days...free of charge...no questions asked. That kind of service is truly unique and unexpected in these times. I think if I am just more careful next time it will not continue to be a problem. This mandolin is worth the investment if you can afford it. I know I tried a few of the cheap models and was never satisfied.

While the cost might be high, the quality and materials used are fantastic. Everything is made to last and the Shun blades are razor sharp. For those with all the gadgets, this is definitely another one to add to the bunch, you won't be disappointed. Plus, with the handle's construction, cutting yourself is impossible when used as shown.

I love this mandoline! Excellent quality. I have only used the slicer (mostly for slicing potatoes for potatoes au gratin. But I will use the other blades at some point.

I purchased this for $300 on sale, which i thought was a little steep. But given that it is the only high quality slicer on the market that is safe to use (no chance of losing fingers).

The price is ridiculous but then it's not so smart to throw $100+ in the garbage can, which is what happens when you buy the others. We sliced up 5 potatoes for pommes anna in a couple of minutes - French fries are a snap - and no cutting glove, no fear you'll be serving French fried finger. This thing just works, and it's safe. The most dangerous operation is washing the very sharp blade. Its only flaw is the lack of a scallop blade...O well.

One year later: A big plus is that we use this a lot more than we did the old French ones, mostly because the fear factor is gone. The blade is infinitely sharper too - the always dull blades on the other kinds is one of the things that make them so dangerous to use.

After a $1200 co-pay for an emergency room visit because of a cheap mandolin malfuntion, my husband convinced me to buy the Shun. I'm a tight wad and the thought of spending that much on a "gadget" made me want to vomit. But as my hisband pointed out, and rightly so, if I had just spent the money up front, I'd still be $800 and a batch of bread and butter pickles to the good. Anyhow, there is no way to slice part of your finger off with this (I mean, you can, but you would really have to be careless and not use the safety gaurd), vegetables are SO easy to slice. Food doesn't bind or get stuck, no matter where I set the thickness (YES! You can set the thickness!!!). I use it for almost all my cutting/slicing because clean up is easy. I tried cheese but that wasn't so good, too wet and gummy. Maybe cheddar would be better, I was slicing mozzarella. But summer is almost here and we'll be back to garden veggies next month. My husband likes to make saurkraut and he says that it is the best machine he ever used to slice heads of cabbage, he said it was effortless. Just be aware that you do have to put a little oil on the safety rail to keep the gaurd movng smoothly but I just put a little olive oil on a piece of paper towel and rub it on the rail everytime before I use the mandolin and that works fine. My Shun sits in a place of honor on my kitchen counter so it is always ready to hand. It's a good looking piece of equipment and gets a lot of attention from my friends who all want to try it. The first month we had it, we ate A LOT of sliced zucchini.
