This is an interesting little knife. It is hook-shaped, with the edge on the "inside" or bottom of the hook (bottom based on the picture in this listing).

Construction: Single piece of steel. Very solid. I can't see this thing coming apart in my lifetime.

Edge: Stays sharp for a long time. A bit of a pain to sharpen though based on the curve and position of the edge. I use an electric three-stage sharpener (the Chef's Choice 120 Diamond Hone 3-Stage Professional Knife Sharpener, White and it takes a while to get it just right. But I love this sharpener, don't get me wrong. Just be patient.

Use: Don't forget which side has the edge! I do that at least once a week. Other than that, the knife performs perfectly and precisely. I use it for close-work boning and it works better than smaller paring knives.

Overall this knife is well worth the price to get into a high quality piece of kitchen steel.

I love Shun knives. This little guy is surprisingly useful. It is great for strawberries and other uses requiring a small sharp blade. While it is stainless steel and could probably suffer misuse well, I still wash it and dry it and put it away right away. My way of showing respect.

This knife doesn't compare to the others. It is super sharp and the handle is designed just right - at least for me. If you need a peeling knife buy this one and you will not be disappointed.

I make apple pie and mashed potatoes during the holidays and both require a good peeling knife and a bird's beak peeler is the best I have found for those tasks. Years ago I got a Wusthof bird's beak peeler and loved it but the handle isn't quite right for me I tried two different Global bird's beak peelers and the handle on one is just wrong, and the other is a dull, crappy knife even though it's Global. So my quest continued until I saw a great deal on the stainless Shun bird's beak peeler.

Grrrreat piece of steel. And looks sweet. The curvature of the blade makes a huge difference when working with handheld items. It's like a carving tool for the kitchen.

It is well made and keeps up with the tradition of shun knives. The knife is heavy and the handle seems to be slippery, which makes it very intimidating that if it falls it will do some kind of damage. It cuts well, and looks beautiful. I use it as a letter opener, however sometimes I see it in the kitchen and is the second favorite knife second to the the shun elite parer. I took one star off due to the slippery handle.
