Received this knife a few days ago. Family has been treated to any manner of foods that require chopping, dicing, etc. This knife is wicked sharp. Beautifully made and a joy to use. I like this size for many general uses and also good for other cooks who are scared of the bigger knives. My daughter tried it and said "yeah, so?" and I directed her to chop the onion with our old (but sharp) Henckels and she said "Ohhhhhh" Night and day.I have knife skills that I never knew! I bought a magnetic strip to display. My only worry was the stainless handle but this is a nicely crafted matte finish that is neither cold nor slippery. Grips like the warm wood versions. Love it!

I agree with the previous reviewer. I was concerned that the steel handle would be cold and uncomfortable, yet after a few seconds in your hand it does feel like warm wood and feels great. Just a warning, it is designed for a right-handed person. My husband is left-handed and was disappointed to find the grip was not made for lefties. The knife cuts fantastically, just like all Shun knives are famous for.

I love this knife. I find myself using it more than any others in my extensive collection. I like the smaller size, its comfortable and cuts
beautifully.

I love Shun knives, and this is one of my favorites, the edge is razor sharp, the handle is solid steel and the entire knife has good balance and a nice weight to it. In addition the dumascus steel folding on the blade provides a nice aesthetic bonus. From personal exprience with this knife (I bought mine around Christmas last year) I can safely say that it holds an edge well and makes difficult tasks like qubic butternut squash fairly easy. This 6" knife is perfect if you or your sig-other has small hands, but makes it less than ideal for cutting a watermelon or fabricating meat.
As always however, you should try out any knife before you buy it to make sure that the weight, handle shape, feel etc. is appealing to you. Make sure you spend time in the motion you would use for cutting so that you can be sure the motion is comfortable. If you cant find the all steel knife to try, the handle is identical to the shun classic line, although the knife feels (to me) a little bit heavier. As the review title says this knife is kasherable for passover because it is one solid piece of steel (of course check with your local rabbi to be certain), but I was given the ok to kasher mine this past year.

Excellent knife for right-handed people only,

The Shun Steel series is identical to the Classic series, but with a steel handle. As such, this is a fantastic knife. The Steel line is being discontinued, so they are some of the best buys on the market at cut-rate prices. Certainly the best buy from a non-specialty store.
Just be aware that the D-shape handle is designed for right-handed people only. Similarly, like most Japanese knives, the blade is ground with a right-handed bias. Shun also sells a left-handed version, but this is not it. Amazon should note that in the description.

Normally I do not write reviews but I just had to this time. I bought this knife a few weeks ago to see what they hype was all about. I originally thought all knives were the same until I had a taste of Shun. It cuts through anything better than my regular knives and it stays sharper too. Performance aside, it's a beauty to look at. You can see and feel the craftsmanship that was put into making this incredible knife. Dont think twice, just buy it!

rusted,

Gave it as a gift, it's not that bad. But perhaps I received a bad one because 2 months in it has developed a dot of rust about 3mm wide along the edge of the blade. It cuts nicely, fits well in the hand, but the rust kills the deal. It was used and stored along with wusthof knives and they never rusted so my guess is product defect or poor corrosion resistance.

i am no expert in knife or metallurgy. it's just my personal experience with the knife.
it was extremely sharp in the 1st month, maybe the sharpest one i've ever used. but it's also by far the most expensive one i used. in the 2nd month it was still very sharp. now after ~5 month, it is noticeably duller, although still sharper than any other cheap knife at my home. i used it for almost everything, except those tasks that may damage the knife like hacking a bone. i expect a little more for the >$50 price i paid. a Shun sharpner is so expensive that i am not sure whether it's worth the investment... |
