Product Description

Amazon.com Product Description

Offering a graceful elegance, this 7-inch Santoku knife from the Shun Steel line is made with a seamless, one-piece stainless-steel bolster, handle, and end cap. The Asian-style Santoku knife has broad blade and especially sharp cutting edge, and it's a great companion for preparing meat, fish, and vegetables. The blade is made from VG-10 steel with a high carbon content for a higher density. This allows the steel to be tempered to a Rockwell hardness of 61, and still have the flexibility and strength to take and keep a perfect edge. It's clad in layers of high-carbon stainless steel that protect the VG-10 and give the Shun its Damascus-look pattern, which also helps ensure that foods stick less during slicing and dicing--resulting in faster and easier food preparation.

Shun knives rely on traditional Japanese construction methods, including a full composite tang, in order to ensure the best balance. The D-shape of the stainless steel handle is designed to tuck into the palm and provide more control to the user by leaving less space between handle and hand (the handle also fits nicely between the thumb and fingers of a left-handed user). This knife is backed by a lifetime warranty. Dishwasher safe, though hand washing is recommended. Made in Japan. NSF approved.

Product Description

Seamless stainless steel construction produces this stunning collection. Features the look and benefits of Damascus steel, yet without it's rusting problems.

5.0 out of 5 stars super santoku PLUS+++, November 11, 2004

This review is from: Shun Steel 7-Inch Wide Santoku Knife (Kitchen)
i was impressed with the original 6.5 inch santoku when i used one at a friend's house for a big family dinner. i own a few of the wustof knives and was under the impression that they were the best knives in the world since so many of the people on the internet kept raving about them so much. no way now. the shun knives are so much sharper and so much easier to use than the wustof that it isn't even funny. When i saw the WIDE santoku i knew i had to have it, since it would provide more width of blade when running the blade up and down the knuckles as recommended for fast slicing/chopping. everything a santoku should be and more. won't trade this knife for an armful of german steel. anyone want some free wustofs??

incredibly sharp, cut through vegetables and produce like butter. i don't know if it's my cutting board or the knife itself, but i feel like the knife sticks a bit more to the board than i want it to (can't get a smooth slicing motion through); probably from it being sharp enough that it's cutting the board too!

beautiful product, it was a steal at $65.

5.0 out of 5 stars Cuts so well, July 10, 2009

Amazon Verified Purchase(What's this?)
This review is from: Shun Steel 7-Inch Wide Santoku Knife (Kitchen)
i have been using my 4 star henckels santoku for 6 yrs. i get it professionally sharpened and have been very happy with it. i got this Shun knife because my dad liked my henckels and thought he may want it. It was on sale @ amazon for about $70. Cool deal !

So of course I had to try it when i received it...and OMG - I sliced a pork chop for a stir fry and it cut through like butta... i then took my henckels santoku and tried a few slices...it just doesn't even come close.

Guess who is keeping the Shun?

Update: i still love this knife. but buyer beware. you may need to get a new butcher block. I ended up getting a butcher block on amazon with a slot that can accommodate a cleaver. This blade is W I D E.
