Product Description

Chef's knives are tapped to do multiple tasks around the kitchen, and the Shun Sora 8-Inch Chef's Knife will become a go-to knife in your kitchen. Sora, in Japanese, means "sky". Let your imagination take you-the sky's the limit with what you can do with your Shun Sora Knives. Featuring our proprietary composite blade technology that brings together a VG10 cutting edge, clad with one layer of stainless steel on each side to create a san mai edge, with a mirror-polished Japanese 420J stainless steel upper. Boasting a razor-sharp 16-degree cutting angle on each side of the blade, Sora puts all the high-performance technology where it's needed most: the cutting edge. Laser-cut, 2-sections are fit together and braze welded to permanently join them. Blade shapes and handles are designed for traditional Japanese knives, while the beautiful wavy pattern on each blade is reminiscent of Japanese sword hamon lines. Each handle is made with a textured TPE polymer handle that provides balance, and is easy to maintain. The texture of each handle provides a tacky surface when wet, making them superior to use around juicy fruits, vegetables and meat. A stunning Shun knife at an incredible price point; you can afford to have one in every style!

This is a great knife for being at the lower end of Shun's pricing.

I purchased this knife a couple of days ago. So far it is exceeding my expectations. Out of the box the knife is very sharp. I honed it with a fine honing steel and it is now an 8" razor blade. Now cutting through anything feels like a hot knife through butter.
Comes with a 10 year limited warranty unlike their other lines with lifetime warranties - though if a defect were present I would think I would figure it out before the ten year mark or would have gotten my use out of it anyway.
It is VERY lightweight and thin which is one of the things I love about it - very sharp and versitile for daily use. If you are looking for something heavy for hacking up chickens this is not for you - buy a cleaver.
As for those who are concerned that they may sharpen the knife past the weld - If you get that far, you're doing it wrong.
Overall this is a great knife and the price point is amazing for a Shun, so if you've always wanted one this is a great place to start. I will be using this knife regularly and will post updates if anything happens, or in a few months when I've put a few miles on it. So far It's gone through about 10 pounds of produce with no hiccups.

I recently purchased this knife through another home goods website. I also own an 8" Shun Classic Chef, 7" Shun Classic Santoku, and 4" Shun Classic paring, and I honestly like this knife as much or better than any of the other, more expensive knives. There are a few things that I really like about this knife:

1) Handle. It has a softer, more traditional feel than the D-shaped handles on the Classic line.
2) Weight. It is lighter than the classic series, which leads to less fatigue.
3) Durability. Tonight I accidentally knocked the knife off the cutting board, onto the floor below (touched a boiling kettle by accident, and the reflex knocked it off). I was sure immediately after watching it hit the floor that the knife would be severely chipped, but actually no damage was done. I've chipped my Shun Classic 4" paring knife just by dropping it a few inches into the sink, so this was really a pleasant surprise. Furthermore, other reviews which talk about chipping are clearly not using the knife properly. Due to the low price point, most people who get this knife are probably not used to working with steel like VG10. Based on my use, this knife will be at least as durable, if not more durable, than the Classic line.
4) Price. At less than half the price of the Classic Chef, you'll have room to buy a good cutting block for your knew, high toughness steel knife.

In conclusion, I would highly recommend this knife for people who are interested in getting into high performance knives, or people who are looking for additional knifes to use for travelling, etc. For me, this is a great knife to buy mass produced; high performance, low price. If I want a better or more expensive knife, I would personally step up to hand made knives, such as Watanabe blades, rather than the Shun Classic line.

Recently purchased Shun Sora and was somewhat surprised regarding 1star reviews. To my amazement, it performed great right out of the gate. Cleaned over 50 lbs of Skirt Steak and 40 lbs of Yukon Potatoes and it was still razor sharp....Great addition for the home chef or professional chef.

If you work in a kitchen this is a must have. The blade is excellent. The balance is top notch, and the price point is beyond perfect. I own the Chef's, utility, and paring knife. All great buys.

This knife is in a whole different class. I use pretty good kitchen knives and keep them quite sharp. This knife comes out of the box extremely sharp. Balance is very good. Knife is fairly light in the hand and extremely quick. Handle is light, and is easy to grip with slippery hands. Blade has a very nice looking unique appearance and holds its edge very well.

Been a chef for over 18yrs and this knife is a pretty good one for the low price,as it is Shun's lower end series (probably created for the "home" cook). Some people have complained that the edge chips, but if they understood the angle degree of the sharpened edge at 16, which is a very harsh angled "V" edge, meaning that the actual beveling of the edge is thin (in comparison to say a 20 degree or even a German blade at 35 degrees). This "thin" beveling of the blade makes it incredibly sharp out of the box but also can make it a bit more fragile for the people who might "abuse" it a little more. Also, the VG10 stainless steel holds less carbon than say their Classic or Premier models and stainless steel has a different (Rockwell) hardness than a carbon steel blade. The stainless steel with less care will rust slower. A carbon steel blade will rust within a day of left with water coating it. (if you've ever seen low quality sushi chef knife that have not been cared for frequently, they don't rust since it is made with low carbon, high stainless steel while a high end high carbon steel one will start to dust immediately.)
My advice to anyone buying any knife (in general) is to research the different types of steel used, as their are many variations for different purposes.
For the price, a 4.0 and quality, in my opinion, gives this series a 3.5.
Comparison note: My Shun premiere 10" chef knife cost me $209.95 on Amazon. This was the cheapest price, including shipping to Hawaii (which for those of you who do not know can be VERY expensive!) This knife directly from Shun would've cost $279.95! So in comparison, THIS knife is a bargain!
