The literal translation of Entremets is "between servings", which reflects the old French tradition of serving a small dish in between courses. The concept has evolved through the years and is now well known by professionals as a layered cake, either sweet or savory. This casserole-style pan is perfect for preparing sweet and savory dishes from layered cakes and brownies to cheesy potato gratins and deep-dish pizza in the home kitchen. However, you may have more fun if you use a French accent while using your Entremets baking pan. Pan measures 10-inch by 13 3/4-inch and fits a 13-inch by 18-inch cookie sheet. Entremets is reusable, just wipe clean and store flat. Pan should be washed before first use and placed on a cookie sheet for stability. Entremets may be used in temperatures from negative 40-degrees Fahrenheit to 480-degrees Fahrenheit.

I tried a favorite pumpkin roll recipe of mine with this silicone baking pan, knowing that after cooking the pumpkin in a sheet pan, it would need to be rolled. The Silpat® Entremet was perfect for the job. I could flip over the cake and peel off the pan like wax paper.

This pan would be great for layered baking, where you bake one hard layer at a time and remove from the pan in an entire piece to place on top of another. When you're done, you just rinse off the pan. No scraping or dishwashing, but the nonstick surface doesn't hold on to a lot of residue anyways. I'm excited to try more recipes with this shiny guy!

I would next like to try drizzling baking chocolate in intricate designs onto the sheet. I'm sure I could cool them on the pan and preserving the beautiful presentation after lifting out of a flexible nonstick baking sheet like this.

Wow! These are super hard to find. Great for dehydrating which is what I use them for. You will need to support them with a large baking pan. They are not self-supporting.

The Silpat Entremet was exactly what I needed for my layered baking! The non-stick characteristic is a baker's dream come true!
