The SimmerMat is a heat diffuser, used on low heat settings, providing perfect heat control for low, slow cooking. The SimmerMat is placed between the pot of food and the heat surface to provide temperature control in simmering and slow cooking. With the SimmerMat HOT spots are eliminated so food will not stick, scorch or burn. Ideal for soups and casseroles, rice and oatmeal, milk desserts and sauces, melting chocolate and toffee, chutney, pickle and relishes and hot drinks. This heat diffuser can be used in place of a Slow Cooker, Double Boiler or Rice Cooker. The SimmerMat can be used on all cooking surfaces, electric coil, gas burner and glass cooktops. It's quite by accident I found this product - on another website to boot. I had been looking for what I called a "burner grid" for about 2 years for our motorhome. The gas burners do not go low enough to simmer. I had checked all kinds of websites and stores over the past couple of years to no avail. Then I came across a mention of a "cooking mat" somewhere & had to check it on Amazon, which, of course, had the best price. I was ecstatic to find it. I really thought I was looking for a product that no one made & I would never find. It works just like it's supposed to: it sets over the burner (in my case, gas) and diffuses the heat enough to enable you to maintain a low simmer. No more burned sauces or soups! I used this (my mom's) product during our annual holiday open house cooking.

After melting chocolate without a double boiler and later simmering a chili for three hours and discovering not a bit of burn or scalding on either I found myself leaving a full pot of rice on the stove and searching Amazon for the Simmer Mat.

The stove in my (rental) apartment is not nearly as controllable as I would like and I have spent all too many evening's constantly stirring sauces and cleaning burnt food from pots. This is, without a doubt, the best kitchen "gadget" I have purchased in ages.

The manufacturer put explicit directions on the cardboard wrapper around the simmer mat. Follow these directions and you will love this mat. I cook with propane. I like cooking with gas rather than electric because the flame is more adjustable. I was hesitant, too, at first after I read that the simmer mat cannot be used on a cold burner. "What????"

First, bring the contents of your pan to a boil, then carefully remove the hot pot of food, carefully place the simmer mat (unheated) on top of the burner you are using and put the pot of food back on top of the mat which is now on top of your warm burner. Turn down your flame (or electric burner) to low and your food should simmer along without scorching. Again, just follow the directions.

The manufacturer was careful to label the side of the mat that should be used for stove-tops with glass, ceramic or induction surfaces and the side of the mat that should be used for gas, electric or solid fuel cookers.

I've used this mat five times now and am happy with this purchase. Just follow the directions.

The product description is at odds with the product usage instructions. According to the instructions this heat defuser should only be placed on burner when the food is already cooked to keep the food simmering and should never be used on a cold burner or at the start or middle of the cooking process. For example if you intend to make a delicate dessert that requires constant stirring like a pudding, then you may still scorch the pudding because this device isn't supposed to be used at the start or during the cooking process.

I was extremely pleased to find that this product really works. My pots don't boil over any more when I'm simmering rice or soup. It's a very simple principle and a very good design, superior to most of its competition.

The product I received did not look like this. It had a center point. Mine warpped within 4 uses and was rocking on the center point. Our glass top is now damaged. I am trying to return the simmer mat. I am curious to see how successful I will be. Unfortunately, I had to give one star.

Followup one month later -- I have not heard from anyone regarding my request to return the purchased item. Very disappointed.

I've been a bit frustrated trying to simmer things on my gas stove with my pots and pans. No matter how low I set the flame I could not achieve a simmer. Rice in particular was a real pain - I always wound up with it stuck to the bottom of the pot. Last night, however, was different.

I finally got to try out the Simmer Mat, and it worked perfectly. I wasn't sure how high to turn the flame up under the mat, so I just turned it down low, but nowhere near as low as I would have before when I was trying to simmer something. I think that using the Simmer Mat makes the flame adjustment not quite so critical. In any event, the brown rice I was cooking came out light and fluffy with no sticking in the pot at all.

I seem to have found the answer to my simmering problems. While I'm sure that there are probably other products out there that will do the same, this works just fine. I'll have to admit that the price seems a bit high for a dimpled piece of steel (it is not cast iron, though it may look like it in the picture) that probably cost no more than a dollar to produce, but I can't see ever needing to replace it, so what's a lifetime of use worth?
