About the Author

Shirley Smalheiser is a Home Economist with a Master's Degree from the University of Iowa. Shirley and her husband live in the Negev town of Mitzpe Ramon, Israel. She is a lecturer on food and nutrition, and is a Life Member of Hadassah. Shirley is currently the co-president of the Beer-Sheva Chapter of Hadassah.

This is an incredible, delicious cookbook! It features eggplant in recipes for Appetizers & Salads, Soups, Eggs & Cheese, Fish, Poultry, Beef, Vegetables, Beans Grains & Pasta, and even Desserts & Sweets! You would never guess that the Mock Pumpkin Mousse and Chocolate Eggplant Drop Cookies owe their tantilizing flavor to eggplant! This is definitely the best eggplant cookbook out there. I highly recommend it.

Eggplant is such an underserved fresh produce item and Simply Eggplant serves to give the reader new perspectives about how this versatile vegetable can be used year-round in menus. A great resource and a must for every cookbook library!
