Although Lowe-Clay does not adequately define "country" food, this eccentric and often charming compendium of her favorite dishes still has appeal. A cook who lives in Vermont and raises ducks and geese, the author covers a range of food, from buttermilk pancakes to tortellini in a sausage cream sauce. And befitting the north country, many of her dishes are heavy eating: there are tournedos, pork and cabbage, lamb stews and serious sauces. For the baker, she offers easily prepared breakfast pastries and a selection of plain and fancy desserts, from lemon cream to chocolate torte. Seafood gets lighter, if also familiar, treatment.
