This is the best fish cookbook I've come across, and is very comprehensive. The drawings are really useful for identifying the fish, as around the world names change. There are clear and simple instructions on how to choose fish, and what you need to get the fishmonger to do. Each fish has at least one recipe and often more. The recipes are delicious, and easy to follow. Every fish lover should have a copy. I left my copy in Europe and I'm about to buy one for here!
