The Cybernox surface is terrific. It's not as slippery as Teflon and other non-stick coatings are when they are new, but it is slippery, allowing you to cook with little or no added fat. Best of all, it keeps its non-stick properties throughout the life of the pan. It doesn't deteriorate over time like other non-stick surfaces, regardless of price.Another advantage is its ability to develop a fond -- the browned bits of food that develop on the pan and add richness and color to sauces when deglazed with a little wine or broth. The all-metal construction means you can finish a dish in a hot oven and even under a broiler, if you'd like. It's not cheap, but this quality line is offered at Amazon for the best prices I've seen anywhere -- and I've shopped around.

I am not a cook or even an enthusiast when it comes to cooking. I bought this pan just to cook my own stuff occasionally; like over-easy eggs and potatoes and such. I wanted something good, that would last. Two things that were not as expected:1) One of the site's write-ups I read said they were "stay cool" handles. They are not ... completely. The half of the handle closest to the pan gets too hot to handle. The end of the handle has-- so far-- stayed cool enough to pick the pan up by. 2) I expected, from the write-up, that this was going to be a no-stick type of pan. So far I have not been able to turn over an egg without it breaking because it sticks. That said I am very happy with the pan. It cooks the food really good and it does -- by using the cleaning thing it came with it -- clean up like new. Even my wife has taken to using it to cook small amounts of stuff. If I buy any more pots or pans, I am pretty sure I will stay with Sitram. Update 8 April 2009 I love this pan. It is used more than any other pan in the house: five or six times a week. And it really takes a beating. A few months back I noticed that the bottom plate had a slight warp in it. I took a close-up picture of the plate and, along with a copy of the recipe (which Amazon still had available), I emailed both to Sitram. Usually, when I email a company about a problem I have to wait several weeks while sending additional emails explaining the situation. But, to my amazement, I received an email-answer from Sitram the next day saying they were going to send me a replacement. I was even more amazed when -- two days later -- it arrived. That is the best service I have ever had from a company. And the new pan has been performing just great. I add another star for service.

Light use for about a month: If you expect it to be NON-Stick you will be disappointed: Stick Resistant Maybe! I use it with a small amount of Olive oil or Olive oil spray: Still a challenge to keep fried eggs from sticking.Good quality product, however, others of same or better quality for less money. SOOOOO! Will I purchase Sitram Cybernox products again: NO! Poor quality to price ratio ----------------------------------------- Update: 8 May 2006: A little experience goes a long way: After a few weeks of frequent use: Pan lives up to its claim! With a little spray and GOOD heat control clean up is a snap!!!!!!! Will purchase more as price decreases GIVE IT 5 STARS

Love it. Cooks beautifully on much lower heat than i was used to. Seasons well, almost non-stick now. Smooth interior, welded handle not rivets or screws. Mirror finish, comfortable rounded handle, oven safe to 1800 degrees, dishwasher safe, can use metal utensils with it. Bought the 11 inch also.

Great pan, but not an ommlette pan ...,

This pan heats evenly, holds the heat so I can cook at low settings, browns the food (creates a "fond" is, I believe, the fancy way to say this), and cleans up easily. The handle stays cool so long as you don't hold it too close to the pan (so, half the handle stays cool, but that is enough even for my big hands). It is great! There is nothing bad to say ... but I bought it to use as an ommlette pan and as an ommlette pan it does not really deserve 5 stars. Eggs stick -- not horribly, but the Cybernox is not as non-stick as some other coatings. So now I use this pan a lot more than I thought I would. I thought I would just cook eggs in it. I bought a Berndes nonstick (for about 1/3 the price) to use for ommlettes and I use this for everything else. I really like that I can brown on the stove or under the broiler and still have cleanup be so easy.

Suuprisingly disappointing,

I purchased this Cybernox pan here on Amazon to give it a try. I was looking for an alternative to the traditional non-stick fry pans that I have had to throw out after a year or so of use. The Cybernox promises relatively no stick cooking, easy cleaning, and superior scratch resistance. That a lot to promise.Well, I followed the directions exactly to season the pan. But the first real time I used it to cook some burgers, it splattered so much and smoked up the kitchen that the smoke alarm in another room was set off. The next time I turned back the heat a lot, but it still smoked up the kitchen. You have to watch the pan constantly. I used a bit of olive oil each time to transfer heat. The pan does heat up very quickly on my glass-top range and appears to be even. It is just so different from cooking with a Teflon pan. The Cybernox pan does have a mirror finish interior, just like the pictures. I noticed some haze on the mirror finish after a few uses. I used a bit of vinegar as recommended. That removes it, but it hazed up after another use. The handle did stay cool, though I didn't heat the pan up really hot to test the handle. The handle is spot welded, no rivets, and will probably not break. It is a very plain looking handle, industrial, which reminded me of a WW-II-era U.S. Navy stainless steel pot I inherited from my mother. That pot is indestructable. So, I would not purchase another Cybernox and will go back to good stainless and Circulon, which I like but have to replace too often.

I love these pans, I now have three and that is all I need. They clean up so well and sticking is minimal. We have grown afraid of the Teflon pans with all the bad health reports and have decided to go all stainless steel. These pans are the best thing on the market. They create a nice browning on meat. The only thing I don't recomment them for is cooking eggs.

I have used this cookware for longer than the oldest review I have seen here. I admit there is a learning curve and seasoning time. In the long run it is well worth the effort. My husband has recently given up on his non-stick and started using the Cybernox. He is still on that curve but enjoys the ease of clean-up without the fuss and worry that comes with the Teflon-type cookware. I can hang these pan in full view for ease of use without worrying about their appearance. (I may have to dry and buff with a towel to get the hard water haze off, occasionally.) These have outlasted my friend's Scan pans. Well worth the price. How much would I have paid for the 5 or more Teflon-type pans that would have lost their coating? It would have been more than for the Cybernox pans I am still using.
