Hurrah for Space Age Technology!, February 1, 2008

I have used Sitram Cybernox cookware for about 4 years now. I have had this particular piece for over a year. The interior surface of the cookware is coated with "cybernox". Cybernox is a metal which is a spin-off of the European space program. It was developed to reduce "space dust" etc from sticking to rockets, etc. If you visit Sitram's web site you can see a video of eggs being fried and NOT sticking in the pan. It is TRUE! Unlike some nonstick cookware, you can braise food in Cybernox cookware. You also don't have to worry about ingesting teflon. However it is not 100% fool proof. You can make a mess with everything seemingly burned on. Simply let the cookware cool to room temperature, add water, walk away. Later on the mess will swish out to go down the disposal.
When cooking with Sitram Cybernox, you will find that the cookware has excellent heat distribution and retention. Prewarm the cookware, especially fry pans, as they suggest, and be ready to keep reducing the heat as you continue to cook, I now have a total of 9 fry pans/pots and if I find I need more I will certainly buy Sitram Cybernox again.
