The French manufacturer Sitram, a world-renowned name in commercial cookware, developed a high-tech alloy called Cybernox to provide permanent, indestructible stick resistance for pans. Though not quite as stick-resistant as nonstick coatings found in other cookware, Cybernox outperforms coatings over a pan's lifetime because it's part of the pan itself and won't scratch (it's safe for metal utensils), peel, blister, or otherwise wear out. It also resists temperatures of 1,800 degrees F or more, making it safe in ovens and under broilers. On Cybernox pan bottoms, an aluminum disk sheathed in steel conducts heat rapidly and uniformly. This heavy, 18/10 stainless-steel, mirror-finish, 11-inch fry pan has a concave, heat-resistant, welded handle that is notched to hang on a hook or a peg. With no inside handle rivets to clean around, the pan scrubs up hygienically, and it's dishwasher-safe. Cybernox cookware carries a lifetime warranty against defects.
