Product Description

Sitram logo Made in France

Sitram France has produced professional grade cookware for over 40 years. It is favored by many of the world's top executive chefs and restaurants. We're glad to have Sitram available in the U.S.

Chef Saucepans

Why do so many professionals around the world favor Sitram cookware? Sitram cookware is made in France, designed for commercial use. The factory is fully aware of the highest expectations that executive chefs place in their equipment, and continuously works with them to provide nothing but the best. Why would you want professional cookware? Oh, where do we start! How about "these pots and pans are virtually indestructible as well as dishwasher safe"?

There's more:

To pour drip-free, simply push the lever. Releasing the lever re-seals it. For easy filling and cleaning, the attached lid opens all the way.

Both lines offered here, Catering and Profiserie, are made of highest quality 18/10 stainless steel to guarantee even heat distribution. Since the base is composed of three thick layers of sturdy metal, they will never warp, yet Sitram cookware heats up quickly and retains heat extremely well.

Needless to say, Sitram's surgical-steel grade material won't discolor or alter the flavor of foods. Users around the world praise how smooth the interior remains even after years of rigid use.

The handles are multiple spot welded to provide superior durability and easy cleaning. The lids feature a small hole to vent: While it keeps liquids and flavors in, it lets just a tiny amount of steam out so that the lid doesn't vibrate top of a boiling pot. All pots, pans and lids are dishwasher safe, NSF* certified and come with a limited lifetime warranty.

Catering versus Profiserie
Catering set

Catering boasts a thick copper core sandwiched between two layers of 18/10 stainless steel. Copper allows for a higher cooking temperature, perfectly even heat distribution, and a quick response time to temperature changes.

The grooved handles are the hallmark of commercial-grade cookware.Catering withstands temperatures up to 1800F and can be used on gas, electric, or ceramic stove-tops. Oven-safe (please use oven mitts).

profiserie set

Profiserie has an extra thick aluminum disk sandwiched between 18/10 stainless steel and comes with comfort grip stay-cool tubular handles.

Profiserie can be used on gas, electric, ceramic, or induction stove-tops. Oven-safe (please use oven mitts).

For your convenience, all Sitram pieces are available "open stock". Sitram does not force you into buying cookware sets to include items/sizes you don't need. Get exactly what you need - not more, not less, and enjoy it for a lifetime. Let Sitram become your trusted partner in your kitchen. Bon Appétit!

The best kitchens worldwide rely on the craftsmanship and integrity of this heavy-gauge stainless-steel saucepan with over a 5-quart capacity. Solidly engineered to conduct heat quickly and evenly over any heat source, the Profiserie saucepan is uniquely designed for induction burners, an electromagnetic cooking technology. But this exceptional pan with a shining polished finish performs perfectly on electric or gas burners as well. Not only will this pan look beautiful for years to come, it also won't react with any foods to taint a long-simmered tomato sauce or delicate fish fumet. The smooth and comfortable handle is welded so that it can be safely put into a 500-degree oven. Though you might be tempted to baby it, the dishwasher won't ever dull this pan's shine. --Lynne Sampson

If you'll be displaying your lovingly polished saucepans on a rack above your head, get the All-Clad Stainless 3-Quart Saucepan or Bourgeat Sauce Pan w/ Cast Iron Handle 7.1" & Lid and be happy. For the rest of us whose kitchens aren't showcases, the Sitram Profiserie is the pan to have. It has served as my primary saucepan for seven years of daily cooking with absolute success. Its thick aluminum base gives excellent heat distribution, but since the sides are un-clad, the weight is much more reasonable than the two alternatives mentioned above. The lid (sold separately) is also lightweight ("cheap," if you will) but exceedingly well-designed, with a small vent and slight conical shape to direct condensate back onto the food.

Since it is certified to 1000 degrees F and designed for induction cooking, I have boiled it dry on multiple occasions and the bottom is as flat as the day I bought it. When that happens, I am also grateful for the stainless steel interior, which can be cleaned with sandpaper should the situation warrant (I recommend 120 grit to start, followed by a smoothing pass with 600, all wet-dry, of course). The hollow handle allows you to pick it up no matter how hot the bottom of the pan is, and the expertly curled lip pours without a single drip. The performance of this pan is such that I don't use a double boiler to make custard in it!

I worked in restaurants for many years before going into the federal gov't, and good pans or bad pans would show their true colours over time.

For those w/ any arm/wrist/finger troubles, know that this pan may be uncomfortable to grip the handle, and may be a little too heavy. The handle is not rounded, but thin and rigid for lack of a better word. The Profiserie Sitram line is easier and "softer" to handle. However, this pan is a powerhouse, if you will, and can handle and endure heavy use in the kitchen, which is why it is "commercial grade" in both name and quality.

I would recommend using only wooden spoons and spatulas in this pan. Pure virgin olive oil is the best to use to get the pan going when sautéing, but extra virgin oo is good for lighter cooking or when simmering. Using a wooden spatula (never metal) will keep things from sticking just fine -- scrape when necessary w/ the wooden spatula. Do not forget to keep your wooden spatulas/spoons/cutting boards oiled too. (See my other reviews for suggestions on this topic)

Oil sprays are not necessary and only last so long anyway. This pan will become a valued partner in the kitchen. It is a joy to use knowing that you are using a high quality item. It is good to hand wash these pans and to use a little bit of "Bartenders Friend" to keep them shining like new. It is also good not to use high heat, but rather middle heat zones for smooth cooking.

The bottom line is that this pan is perfect, and beats a Tephlon or other nonstick pan in durability without trouble. In addition, unlike the nonstick pans, you do not have to worry about scratching it, no peeling of the coating, and best of all no chemical concerns leaching into your food -- there has been much debate/concern about this. I do not use nonstick pans for anything.

I hope this is helpful.

We're replacing our cooktop with an induction model, which means replacing a lot of pots and saucepans.

The stuff you get from Target and Walmart is very flimsy, and if you cook at all, you know you've got to continually buy new non-stick cookware. (Even the new ceramic-coated ones kiddos....that garbage is no better than the Teflon it's supposed to be such an improvement on. It chips VERY quickly. Same story, different batch of crooks.)

Anyway, the stainless steel eliminates the frequent fryer program, if you can find a good, well made brand.

This Sitram Profiserie line fits the bill.

It ain't pretty. The handles are spot welded on the pan, which I consider a minimum requirement (as opposed to having those great honking rivets running through the pan that catch all the food and are a hassle to clean), but they are attached with very small welds, and the welds sometimes show inside the pan. They look like they wouldn't hold a full pot of water, but I filled it to the brim and had no trouble with the handle breaking from the weight, so it's all good.

The bottom of the pots are heavier than the sides, making the pot itself stable at high shouldn't warp. (And I did boil it for several minutes at highest heat to test it out.) The sides are thinner, reducing the weight of the pan. Also good. (You fill a Le Creuset with water and it takes two people to lift the pot, and I rarely have a sous-chef on hand.) The handles are hollow and stay cool enough to handle without burning yourself at high heat.

The bottom is un-shiny and ridged/rough. Like I said, not pretty. And the lid is just thin solid metal demi-cone. (I like to check the progress without lifting the lid sometimes, so I prefer glass tops.

I read about this company's pan many years ago in "The New York Times". The author raved about its durability and how easy it was to clean. It holds heat evenly, too. All of these claims have been substantiated by me. I have made many puddings in it without burning any of it on the inside bottom of the pan. I use this pan at least twice per day and bought another one, also. My first pan is about 2 years old and going strong. It far surpasses my other Revere and Farberware pans.
