Today, as fast food companies are bringing back the fat into their foods, we must look at ways to maintained a healthy balance in nutrition. The Meat Board Test Kitchen from the National Live Stock and Meat Board has published a book titled Skinny Beef, offering their versions of streamlined healthy beef recipes. The over 200 pages offer more than 100 recipes with over 75 of them able to be prepared and cooked in under 30 minutes. Each recipe offers nutritional information per serving and contain ingredients found at most grocery stores. Several of the recipes can me made in batches and used to create others, or some use leftovers to create yet another meal. The cookbook offers several basic recipes and others that are a little more elaborate: Apricot-Mustard Glazed Sirloin with Grilled Leeks; Carne Asada; Sesame-Ginger Grilled Sirloin; Beef, Pasta, & Artichoke Toss with Balsamic Vinaigrette are just a few of the titles offered. Skinny Beef is a very easy to follow and use cookbook, and is part of the Better Homes and Gardens Book Club Selection. Skinny Beef by Marlys Bielunski, Susan Lamb Parenti, and Irene Yeh, R.D.
